Keto Berry Crumble Bars | TPH Low-Carb Blueberry Recipe
FULL RECIPE:
Crust:
-1/4 cup erythritol
-1/2 tsp fine salt
-6 Tbsp melted butter
-2 cups almond flour
-2 Tbsp oat fiber OR coconut flour
Mix all the crust ingredients together, reserve 1 cup (8oz) aside for later, press the remaining crust dough into a prepped 8"x8" square baking pan. Bake at 325F for 15-20 minutes or until edges are golden brown.
Berry Filling:
-1/4 cup allulose
-2 cups blueberries (or any other berries)
-2 tsp lemon juice
Mix together the filling ingredients, pour over top the freshly baked crust, bake for 15-20 minutes.
Crumble the reserved 1 cup of crust dough over top of the half-cooked berry filling, then continue baking for an additional 20-25 minutes.
Cool fully before slicing.

    I am going to try making an enriched (with olive oil & butter) bread using yeast, & a flour blend of 1/2 egg white protein flour, 1/4 oat fibre, 1/4 lupin flour & a small amount (12% of the flour blend) of vital wheat gluten. Still need to play around with it but theoretically, I should get something halfway decent.

    A new video on sweeteners that includes allulose, & maybe monk fruit, would be great. Glad to see you no longer use isomalt. It triggers insulin response & is bad for gut bacteria.

    No. Did not work at all. Had to add more than a tbsp of water to wet the sugar and still did not work. Such BS from some of these recipe "creators". People waste very expensive ingredients and do NOT get the advertised results and it is very annoying. Allulose/erythritol 1/4 cup did in fact reach candy stages but addition of butter/cream at end made it NEVER SET as that was a dilution factor. Stuck to paper in pan as well and only salvageable as a caramel sauce to be scraped off the paper. Just NO.

    I just calculated the macros for this recipe. With all that HWC a serving comes out to 981 kcal. YIKES!!! Even if I cut your serving size in half that seems like an awful lot for desert if you’re eating it along with something else. Anything I can substitute since you’ve already got all that Xanthan Gum to thicken it?
