    KETO PEANUT BUTTER COOKIES
    This is one of the classic American cookies: sweet, chewy and slightly dense with a crispy edge and rich peanut butter flavor. To get the right texture you really do need to use at least half allulose or tagatose, though I recommend most or all of the sweetener be one of these. Erythritol can also be used but only in smaller amounts otherwise these cookies will have a crumbly texture, less chew, and a cooling aftertaste. Check below for the specific ingredients and equipment I used.

    Is it still gonna work with 100g or 140g of erythritol instead of the tagatose / allulose? They aren't sold in Europe.

    Hi! What are your thoughts on allulose, (as possibly being the sole sweetener, or just in general use for all sweetening needs)? I've been an erythritol user for a long time, and would like to hear your respected opinion.

      It's my preferred sweetener along with tagatose, but it's extremely expensive. I cut it with erythritol so that I don't go broke and because I know most of my audience either can't afford or can't access allulose/tagatose in most stores. :)

      I'm thinking I'm taking all my sweeteners and mixing them up in a bowl and keeping them in a covered tub cuz I can't seem to find The One I like. Except I don't use Stevia, it's the worst stuff I've ever tasted.

      Stephan Blake I'm guessing you're american or canadian? It seems only in north america are people taught that raw eggs make you sick. Most of the rest world doesn't even seem to refrigerate eggs, yet north americans do. I was raised in the USA and everyone I know thinks raw eggs are dangerous. I think it goes back to a scare with some salmonella spreading through unwashed raw egg shells in a very small period of time a few decades back and ever since then it's been taught that raw eggs are dangerous. It's not true unless you are eating really old eggs or eggs from sick hens.

      @@TravelingpastryhunterBlogspot Eggs sold in Europe can't be washed so they have their protective layer natural on them. As I know eggs in the USA will be washed before selling and that's why you must cool them.
