DECADENT KETO CHIA PUDDING 3 WAYS
Chia pudding always felt like a "diet" dessert to me before I figured out how to make it right. These three recipes make a great base for keto chia pudding that actually tastes like a real, decadent dessert pudding, not just a "health food".
The first is a chia version of black forest cake, dark chocolate contrasted with cherries. The second is a creamy keto alternative to pumpkin pie, with all the spices and flavor without the carbs. The third and final recipe is a chia adaptation of what Americans call german chocolate cake, with a milk chocolate base and coconut pecan "frosting" on top.

If you can’t stomach the texture of chia seeds, just use a blender to grind it to a smooth pudding texture🙂

Tried this yesterday with coconut milk and a little coconut cream didn't have any milk, made chocolate and vanilla, both came out excellent.....thanks!
Made the german chocolate version today. Love how thick and rich it is although the chocolate taste could be stronger. My only gripe is the high cals per serving, you really cannot eat too much of this! 😅

Can i use erythritol instead?
How many net carbs in each of these recipes?
good you have small portions as chia seeds are high in carbs 12 grams for 1oz
Most of the carbs in chia are fiber, which the body does not absorb as calories. :) Humans do not process plant fibers the way cows and other herbivores do, so we can't absorb the energy from it.
Where are the net carbs and macros listed?

Does allulose have an aftertaste?
I don't notice any. The big plus is that it does NOT have the cooling aftertaste that erythritol has.
Can you grind the chia seeds for a different texture ?
yes
yes you can make a larger batch and grind it in the blender to get a a different texture, but I found that it ended up gloopier and actually less smooth of a mouthfeel than just using the normal whole chia seeds. :)
