KETO ZUCCHINI BREAD + MUFFINS
This is one of those desserts that's not only yummy and comforting, it also contains veggies and therefore can be eaten at breakfast without any guilt whatsoever. The video shows me making a loaf cake version, but if you pay attention to the baking directions on screen I show how to adjust to make these as muffins! Check below for the written out ingredient quantities.

RECIPE: yield 1 medium loaf cake (or 10 medium muffins)
1/2 cup -- 105g melted butter /OR/ melted coconut oil
1/2 cup + 2 Tbsp -- 125g erythritol (or allulose or tagatose)
3/4 tsp sea salt
5 large (55g each) free-range eggs
1.5 tsp -- 7.5ml vanilla extract
1 tsp.-- 5ml ground cinnamon (or cardamom)
3/4 cup + 2 Tbsp -- 100g superfine almond flour (or other finely ground nut or seed flour)
1.5 Tbsp -- 18g coconut flour (or oat fiber)
1/2 tsp. xanthan gum /OR/ 1 tsp. guar gum
3/4 tsp. baking powder
2.3oz -- 65g grated zucchini /OR/ yellow squash
LOAF: Bake at 325F / 163C for 35-45 minutes.
MUFFINS: Bake at 350F / 180C for 15-20 minutes.

The texture of that bread looks fantastic! Most low carb quick bread loaves I've seen have a gummy texture. That's why I've been hesitant to make them but I will be making this recipe. You are so gifted!

Yes, you could add some cacao powder in place of the coconut flour or almond flour! :) don't do too much though because it is more bitter and might require you to also up the sweetener amount. :)
Can I use CMC gum instead xanthan gum? What is the amount of CMC gum then?
I was so excited to see this as I have zucchini in the freezer, but alas mine is puree not grated. Will you share your thoughts on using pureed?
It could work but your final texture might turn out differently. Give it a try! It should still taste good regardless. :)

Couldn't find the macros on your website or this vlog.
I no longer do macro estimates because of how time consuming it is. There are services that go go through the process for you, but the reliable ones require a significant fee. In the future when I can afford to I will go back to providing macro estimates but it's too time consuming for my current work schedule.

WHAT is "Bulk Keto Sweetner"?!
Stevia & Swerve do NOT have a 1 to 1 ratio
Anything with erythritol or allulose as a base bulking ingredient are considered "bulk keto sweetener". :) Even if they have stevia or monk fruit added, the sweetness levels are pretty close, though not always identical. Feel free to experiment with the brands you have available to you.

USE ALUMINUM FREE BAKING SODA, SO YOUR BAKED GOODS FON'T TAKE ON THAT BLUE-GREEN HUE
The green comes from the zucchini in the cake... did you not watch the video? Besides, I used aluminum-free baking powder.
