As of 2018 it seems that allulose is not easily available outside of the USA, so try tagatose (almost identical to allulose) which is available on iHerb in most countries, linked below!

-Instead of keto chocolate chunks, use cacao nibs or chopped pure cacao paste!
-Instead of butter, use steam-refined coconut oil (no coconut flavor!)
-Instead of xanthan gum, use double the amount of guar gum.

These look amazing. I wonder how they would turn out without the cocoa powder. Just thinking out loud. I can't make things so I just dream about it.
On topic of too many and too expensive ingredients: it's true but in my experience it is necessary to imitate food that is high-carb in its original form.
If you need easier and more affordable recipes, you have to go for dishes that are already low-ish carb in its original form, e.g. cheesecake
What do you recommend instead of allulose or tagatose? Can I just use more erythritol?

Anyone found a cheaper source for allulose or tagatose? $17-$20 a pound is a but much for most people
It is expensive, that's why I cut it with erythritol, but you can use just erythritol if you'd like but the texture will suffer. Xylitol is another option that works like allulose, but it is higher carb so be careful!

Best deal I've found out there, under $10 per pound. And it does come in proper packaging unlike how it's shown in the picture.

Although it looks good...This was a lot for some low carb cookies and appears to be somewhat costly (hence another comment asking about a less expensive product in lieu of one used). JS...
The reason I use the products I do is because, for the taste and texture, they are the best options that are readily available in my country. There are better options that are much more expensive (tigernut flour, sunflower seed flour, MCT oil, etc.) but they are harder for people to get and even more expensive than almond flour and erythritol, which are now actually available online in bulk sizes that make them much more affordable than in past years. :) I also recommend people keep desserts to a minimum (small portions) on a keto diet, which means one bag of almond flour can last you a long long time.
Ingredients ending is 'ose'. Hmmm...
Cellulose makes up most of the fiber in green plants, it ends in "ose" too. Sucrose is a natural sugar ending in "ose" as well. If you are opposed to artificial sweeteners that is a legitimate worry and I respect that, but please don't worry yourself just because something ends in 'ose'. :)
With 1 tbsp of gelatin might be even better.
I would say even better is using hydrolyzed collagen protein (the pre-digested form of gelatin) in place of some of the almond flour! :)
There has got to be a shorter version of this. Too many ingredients
Most keto cookies need the basics: almond flour, butter, eggs, sweetener. Everything else is for flavor. Without the cocoa powder, it's not a chocolate cookie. Without the vanilla and salt, the flavor isn't as good. Without the nut butter or guar gum, the texture doesn't hold quite as good (but it is optional). Feel free to omit stuff if you'd like, but I make these recipes so that they taste as good as possible, so keep in mind that omitting ingredients will reduce the quality of the final taste and texture. :)
You have to realize this is not conventional cookie. Trying to replace the flour is simply challenging. I thank the people who try’s and have success in Keto baking.
Not sure you can call this keto, lot of inflammatory things such as the nut butter and almond flour. Low carb sure, keto less so.
