have you ever tried tagatose? i heard it makes good caramels but have yet to find a recipe or video with tagatose being used

So, I FINALLY made this recipe and the stevia(monkfruit drops) mix with chocolate was entirely bitter, I was sad. I actually made this for a trip and it took quite a bit of my morning. Well in the afternoon, I left it in the freezer to set as I was packing and left it...bummer. I am on my trip now and was able to bring along the keto peanut butter cups so it wasn't a total loss...however,
In your chocolate recipe( I did it separately from your website)...I made the chocolate with allulose vs erythritol and it came out grainy, but amazingly delicious...is that why you don't use it for chocolate? I also used your Amazon link for the chocolate molds and they are so very pretty. If I have to sacrifice texture for taste I will do it. I also use inulin in place of protein powder...tasted like real chocolate, but again grainy...what can i do? Erythritol used to be (2017)really cooling...does it still do that?
Erythritol will always have a cooling aftertaste like most sugar-alcohols, that's one of the reasons I recommend allulose or tagatose now. and yes, you are right, I did use stevia to avoid the grainy texture for the chocolate. Real chocolate is made using a special method called conching that grinds up the sweetener with the cacao into unbelievably fine particle sizes, something less than half the size of even normal powdered sugar particles, so even if we use powdered erythritol it will still be grainy in our homemade chocolate mixtures, sadly. I am used to very dark chocolate so I guess the bitterness doesn't bother me even with the stevia added, if it bothers you then I would recommend buying a keto-friendly sweetened chocolate (Lily's is a good brand that makes some) as they won't be bitter and will have a smooth texture.
