KETO LEMON POUND CAKE
This is a keto version of the classic lemon pound cake that Starbucks serves, with a dense, buttery texture and a sweet citrusy icing. Follow the recipe by weight exactly for the best results! I tested waaaayyy too many versions of this recipe with only slight differences in amount of almond flour, egg, baking powder, all of it threw off the texture until I got to this final recipe. I usually prefer to use weight instead of volume to measure, but I'm grateful you provide both since neither allulose or tagalose is available in Canada, so I now I know how much Swerve to use instead.
Thank you! Yeah trying different keto sweeteners is expensive, but thankfully the differences in anything cake-like won't be that big, feel free to use any keto-friendly baking sweetener blend. It's really only for candies and cookies that you need allulose or tagatose. Tagatose by the way is available in iHerb.com and ships to Canada. :)
@@TravelingpastryhunterBlogspot I love iHerb, but unfortunately they don't sell Tagalose. It doesn't show up when I search the site, so it could be they only ship it to the US.
No biggie, I love Swerve and have some BochaSweet on hand for recipes where a more liquid-y texture is called for.

Hello, fantastic recipe, problem is can't get allulose, can i use more erythritol instead ? EDIT: Checked the notes and you have already addressed this: "You can use all erythritol or other keto baking sweetener, but allulose or tagatose really will improve the moisture and taste of the pound cake, there will also be less cooling aftertaste." EDIT: I made it and it was fantastic! Thank you so much!
