    KETO CHOCOLATE PUDDING
    This is the American version of custard, made without eggs and normally (in the non-keto world) with cornstarch as the thickener. For this keto recipe I have two alternatives to cornstarch: guar gum, or gelatin. Check below for the written recipe.

    RECIPE: yield 2 cups (480ml)
    1+1/4 cup / 300ml almond milk (unsweetened)
    6 Tbsp / 60g erythritol (or other bulk sweetener)
    1/2 tsp sea salt
    1/4 cup / 30g cacao powder
    1/2 cup / 120ml heavy whipping cream (or coconut cream)
    1 tsp / 5ml vanilla extract
    2 tsp. powdered *gelatin /OR/ 3/4 tsp. guar gum
    --*soak the gelatin in 2 Tbsp cold water before using--

    First batch was too salty. Left the salt out on second batch. Much better. Also, used zanthan gum for thickener. Made a little whipped cream to top it and it was really good. I'll definitely make this again. Thanks for sharing! 💕

    you can also use xantham gum. i made this last week. it was perfect.

    Could you please tell me how long you cook this for? I can't find the directions anywhere only the ingredients. Also, do you put it right in the refrigerator while it's hot? I just made it I hope I did okay it looks really good. Thank you

      You just cook it until the gelatin has dissolved so just about 1 minute, same for using the guar gum, and ideally you let it cool to room temperature before putting it in the fridge but I always cheat and put it straight in the fridge, just make sure the container you're using can handle the quick change in temperature. :)

    Try adding avocado as your thickener...still tastes great but you pick up more fats....

    I'm trying to stay away from.artificial sweetners. What I've been doing is mixing pure cocoa powder (around 1 tablespoon) with cooled coconut milk till it reaches the fluffy consistency I like. I then add some blueberries. Nothing sophisticated but I get my cocoa fix. Tastes like dark choc mousse to me.

      I'm always gentle with metal on nonstick surfaces, it barely touches the bottom. :) My saucepan appreciates your concern though lol

    Opt for the gelatin. ..guar gum is not good for your gut.

    OMG I made this and it was so salty it was pretty much uneatable!! Seriously I never give a thumbs down, but, this was absolutely terrible. I will try to tweak it and I'm definitely ditching the salt. We ended up throwing it away. My son couldn't eat it either. I hate that I wasted all my ingredients.

      The recipe only calls for 1/2 tsp of coarse salt, which is the equivalent of 1/4 tsp of fine salt, how much did you use? The written recipe page has the detailed info for coarse vs. fine salt amounts, I'll make sure to specify in future videos when it's coarse salt, but even with the full 1/2 tsp. it shouldn't have tasted salty...

      If you check the other comments, other people have tried this recipe and had no issues with the saltiness. Maybe you accidentally measured wrong or used some other pre-salted ingredient in the recipe?

      I had the same problem. First batch went in trash, second batch I put no salt in and it was much better.
