Yes sir. Honestly, I had roughly a pound of each meat and just put as much as I wanted. I didn't measure but your logic would be correct.

Your version is great. Cajuns do not use tomatoes in their cooling, CREOLES use it. Here's New Orlean's Copelands Recipe I'm sharing w/you.. Copeland’s Restaurant Crawfish Bread Recipe The Copeland’s Restaurant Crawfish Bread Recipe is a popular appetizer that combines the flavors of crawfish, cheese, and bread. Here’s a breakdown of the recipe based on the provided search results: Ingredients: 1 lb peeled, cleaned, and deveined crawfish tail meat 1/2 stick butter 1 clove minced garlic 3/4 cup ripe, chopped, & drained Tomatoes 1 tablespoon Cajun seasoning 3/4 cup Monterey Jack cheese 1/4 cup grated Parmesan cheese 1/2 cup mayonnaise 3 tablespoons chopped fresh parsley 1 loaf French bread Instructions: Preheat the oven to 350°F. That dough is over mixed. It will be too tough 😂😂😂. You want tender crust. Never knead pie crust! Dude don't add any hot sauce to the pie filling. That is a gentrified pie.
I understand were you are coming from but surprisingly, the pies were nice and tender when they were done and I didn't add hot sauce to the filling. If you like hot sauce in your filling then go for it. Jalapenos would be nice there I think. I wasn't trying to make an exact replica of someone else's recipe. I'm just making a base recipe for whoever to have fun with. Thanks for stopping by and checking out the video. Oh and by the way, not by any means am I saying that my dough does not need a little work? It definitely does, but it did turn out fairly well on this one.
Try it without kneading and see the difference. They will melt in your mouth. Just make it like pie crust and you will not believe the difference. I'm speaking from 50 1 years of experience. It makes a world of difference. People will burn their hands trying to get those pies fresh out the oil or the oven.

@@WestCoastCajunCuisine I cheat a little when I make mine. I buy Savoie’s roux in a jar, to cut out a step. Certified Cajun. I get the dark, but they make a light as well. Yours is a happy median, almost as if you used both. I’ll tell you a little story. I’ve seen my mom make roux many times. My first time as an adult, I tried to make a roux, it was a disaster. I thought it was water my mom was using, so all I did was make glue. I accidentally figured it out, when I was pan frying fish, dusted with seasoned flour, I saw the flour that came off, getting darker. I got a peanut boiling story, but that’s for another day, lol.

Kudos for not deviating from the original recipe. That’s a fine loaf, and fine sandwich. Central Grocery olive mix is the best, and I’ve tried a lot of them. A little tip, we chop our olive mix up finer. It’s easier to manage, and does not change the taste.

@@WestCoastCajunCuisine I just subbed. I’m in south Louisiana, and have had a lot of these sandwiches from a lot of different places, but love making them myself. I’m not an expert on Cajun cooking, but can make a decent gumbo. My jambalaya is made with Oak Grove mix, as I’ve never learned from scratch. The mix is really good, as it produced a stones throw from the jambalaya capital.
Some of the very best food I ever ate was Cajun/Creole and I've been hooked ever since. I was out of town working, local crew took me to Brennan's, didn't have a clue what I was looking at on the menu. Waiter said "I'll take care of that" and took my menu. Later, he delivered blackened catfish with crawdad sauce that was out of this world! So many taste sensations going on; I'll never forget that meal. I'm pretty late to this party but glad I stumbled on your channel. Can't wait to try some of your recipes. Thanks for posting. Zk

@WestCoastCajunCuisine Nope ! I have to create one. 10,000 ways to make chili. My plan is to use dried chili's and some ingredients smoked on a smoker and char and caramelize chuck roast on a Weber charcoal grill along with corse grind chili meat and deer hamburger meat. That will be 3 different textures of meat. Stew type , course, and find grind meats. In Texas we don't use beans, but I like them in my chili. My top seasoning mix will be Sazo'n by Goya foods. It is great in soups and beans. I'm going for a smokey , spicy umami flavor. The kind that leaves a good taste in your mouth after you eat a spoonful. That can be hard to come by. I'm starting off by Creating a stock like one would make for Birria tacos. That is why I'm starting to work on it a week earlier.

Next time use the drippings from the chicken and sausage that you should’ve thrown and browned in the pot first. Adds more flavor to your roux but looks good
