Cajun Smoked Turkey

- Cajun Smoked Turkey, a staple in my house on Thanksgiving! It is one of the best ways to cook a turkey in my opinion. Succulent, juicy, and delicious! Give this recipe a try and you will be the hero of Thanksgiving!
Brine
1 cup of salt per gallon of water
1 cup of brown sugar per gallon of water
2 tsp peppercorn per gallon of water
2 Tbsp crab boil seasoning per gallon of water (optional)
2 bay leaves per gallon of water
1 stem of rosemary per
3 sage leaves per
Creole butter injection
1/2 yellow onion
1/2 green bell pepper
1 stalk celery
4 cloves garlic
2 cups chicken stock
1 Tbsp Creole or Cajun seasoning
2 tsp hot sauce
1 stick butter
1 tsp Worcestershire Sauce
juice of 1/2 a lemon
1 tsp salt
1 tsp thyme
1 tsp oregano
1 tsp sage
Seasoned butter

Turkey
1/2 yellow onion
1/2 green bell pepper
1 stalk celery
1/2 orange sliced
1/2 lemon sliced
4 cloves garlic
1 package of poultry herb blend
2 Tbsp Creole or Cajun seasoning
