@WestCoastCajunCuisine OK, my wife is a seafood freak. I'm on a quest right now for a chili cook off next Friday. I will cook ingredients days in advance.
@ 44240xtp so you have a good chili recipe? Hook me up! Of course it doesn't have to be your competition recipe but I love me some chili. Maybe I could feature it on the channel and make a video.
@WestCoastCajunCuisine Nope ! I have to create one. 10,000 ways to make chili. My plan is to use dried chili's and some ingredients smoked on a smoker and char and caramelize chuck roast on a Weber charcoal grill along with corse grind chili meat and deer hamburger meat. That will be 3 different textures of meat. Stew type , course, and find grind meats. In Texas we don't use beans, but I like them in my chili.
My top seasoning mix will be Sazo'n by Goya foods. It is great in soups and beans. I'm going for a smokey , spicy umami flavor. The kind that leaves a good taste in your mouth after you eat a spoonful. That can be hard to come by. I'm starting off by Creating a stock like one would make for Birria tacos. That is why I'm starting to work on it a week earlier.
@ 44240xtp Well this is an older video but nonetheless a great recipe. Maybe this could help.
