Red Beans and Rice

Red Beans and Rice is one of those hardy wonderful dishes that I love to eat year around. As simple as this dish is, it's crazy how much flavor it packs! Enjoy!
Red Beans And Rice
1 Large Yellow Onion diced
1 Large Green Bell Pepper diced
2 Stalks Celery Diced
4 14oz cans of red kidney beans
1 smoked ham hock
4 cups chicken stock
4 cloves garlic minced
2 bay leaves
1 tsp dried thyme
1 Tbsp. fresh chopped Parsley
1 1\2 Tbsp Cajun or Creole seasoning
2 tsp salt depending on what Cajun or Creole seasoning you are using.
1 lb smocked sausage
