Is this really «stikkelsbær» («gooseberries»)??? They don’t look like any gooseberries I have ever had, but maybe it’s just the video that doesn’t show the typical stripes the gooseberries have? I have never seen them so deep red either, they’re usually a color between burgundy and reddish brown.
They are indeed gooseberries (krusbär in swedish). Home grown and I think they are called HINNONMÄKI RÖD, but I'm not 100% sure about that...
LOL, had to come from a Swede! 😉 Not only pineapple and banana, as before, but kiwi??? Well, it may work, but I would for sure prefer a not too ripe green kiwi which is fresher in taste than the yellow (sweeter). The acidity and sweetness in the pineapple is one of the things that makes it work so well, which is why I think the green kiwi would be the best. Not sure I wan’t to try this though… May as well stick to the pineapple which I love… PS! Did try a pizza with pineapple and banana (and ham) at an Italian restaurant in Lanzarote once and it actually was good. I also tried it on our traditional Norwegian pan pizza once and that was good too, but I never made it again. It’s simply better with only pineapple or a drizzle of a balsamic reduction (or homemade balsamic syrup) for that sweet/acidic yummyness on a pizza - those two simply works (not at the same time). That didn’t look like a cheesecake for sure!!! At least not the type of cheesecake we’re used to (American cheesecake, I guess). Yours look delicious though! Baked cheesecake is always the best, if you ask me. New York cheesecake has been my favorite, but I haven’t had a cheesecake for years, since I’m plant based. I should try making one using homemade coconut yoghurt cheese (basically vegan yoghurt you «hang» extra long, up to two days, to get out as much water as you can, so you’re left with something very similar to a cream cheese)! With an egg subsitute instead of the eggs, it may be possible to make a plant based version of your cheesecake too! I wouldn’t call yours fake though, as it does have cheese. 🤗
Yeah, this is definitely different from an american cheesecake and something I grew up with. I've seen it called "Swedish curd cake" as well and that might be a better name for it... The "fake" part here is using cottage cheese instead of starting with milk and cook it for an hour or two...

There are also common non seafood versions. Like lunch meat, or meatballs +red beet salad, or vegetarian. Also vegan, of course, where they replaced even all the basic egg and dairy components with whatever vegans do.

I've never done that myself and I think the cake would become a bit too soggy for my liking. But perhaps I should test it at some point and find out if it is an improvement. :)

14 g dry yeast?
Hi! Dry yeast is sold in 14 gram packages in Sweden so thats why I'm using it. 14 g is roughly 4 teaspoons and also equals one 50 gram package of fresh yeast.
Loved the pea soup + pancakes + lingonberry jam & cream when i stayed in Stockholm. Traditional thursday fare for blue collar Swede is how my colleagues described its tradition!

Hej Christian! Jag körde på 65 grader i 1.5 timme. Har sett recept på lägre temp och kortare tid, men jag tog i lite extra. Inser att jag inte gjort denna på ett tag och att habanero-plantan fortfarande har frukter att plocka så kan eventuellt bli en laddning i helgen :)

What's the rationale of cutting the bread into different sizes?
It's just a thing I do to make it hold together better. Not really necessary, but I think it makes it easier to cut it into smaller pieces when serving.
I lived in sweden for some years and i visit regularly since family lives there. This is the one dish i just cant stand eating. Sliced bread caked in mayo spread is just too much despite all of the other addons.
Need to eat a better done cake, most likely too much mayo which I don't like either. The ratio should probably be like 1:4 or 1:3 mayo to creme fraiche not 50/50 like many do or even worse.
