  • Introducing my take on the classic burger, crafted with wholesome black beans as the star ingredient. After experimenting with various online recipes, I've concocted a version that hits the mark for flavor and texture, offering a solid foundation that's both delicious and holds together beautifully during cooking.
    To achieve the perfect balance of flavors and consistency, I begin with a savory base of onions, carrots, and celery, known as 'soffritto' in Italy or 'mirepoix' in France. Additionally, I incorporate dried mushrooms, ground into a fine powder, to infuse the burgers with rich umami notes - a key element that sets these burgers apart.
    To ensure the ideal texture and minimize excess moisture in the batter, I opt to bake the black beans briefly in the oven. After straining off any liquid, I spread the beans on a baking tray and bake at 200°C for 10-15 minutes. While this step is optional, I find it enhances the overall texture of the burgers.
    While these black bean burgers are already satisfying, I aim to make them even firmer in future iterations without compromising their deliciousness.     10 g Dried Shiitake Mushroom
    100 g Yellow Onion
    50 g (0.5 pcs) Carrot
    50 g Celery
    5 g (1 pcs) Garlic Clove
    120 g (2 pcs) Egg
    15 g (2 Tbsp) Breadcrumbs
    24 g (2 Tbsp) Potato Starch
    35 g (1 dl) Rolled Oats
