From my Family to Yours…Aunt Echo's Creamy Dreamy Mild Enchiladas Your Family Will Love

  • I am so excited to share one of my delicious treasured family recipes with you. Aunt Echie's enchiladas have been a family favorite for generations, and still are! They are very American using canned soup and are very budget friendly. These can easily be doubled, tripled or quadrupled. Get your family together and enjoy!

    Here’s your recipe!
    1/2 Lb Ground Beef
    1/2 Tsp Garlic Salt
    1 TSP Salt
    1/2 Tsp Pepper
    1 TSP Garlic Powder
    1 Can Cream of Chicken Soup
    1/2 Soup Can Water
    1 Medium Tomato, Chopped
    1 4oz Can Green Chilies, Chopped
    1 Pkg 12 Corn Tortillas
    2 Cups Grated Cheddar Cheese
    1/2 Cup Onions, Chopped
    Approx. 2 Cups Shredded Lettuce
    Vegetable or Canola Oil
    Brown ground beef, season with garlic salt. Drain, set aside and keep warm.
    Mix well and heat soup, water, tomatoes, salt, pepper, garlic powder and chilies to almost boiling but do not boil reduce heat and keep warm.
    To assemble per person, fry a tortilla in hot oil for just a few seconds to soften. Dip tortilla in warm sauce and place on a plate. Top with 2 TBS warm meat mixture, 1 TBS onion, 2 TBS or more cheese and 2 TBS warm sauce. Repeat with 1 or more tortillas depending on appetite. Surround with shredded lettuce.

    Life must be treating you well, because you look fantastic!
    I would eat the heck outta this, another one I need to add to my to-cook list. When I have leftover corn tortillas I just toss them in the freezer, then if when I'm feeling munchie I just take a few out, cut into wedges, drizzle with oil and bake at 425 for abotu 10-15 mins, (nearly) instant tortilla chips.

    My enchiladas are something I was taught in a restaurant. They are similar though in that you have it all prepared and don't require baking. They are almost the opposite of these though. I make the filling in the pot almost like a chili or soup, then I just brush the tortillas with sauce. Very finely diced potato is the secrete to the recipe. I'm not 100% sure what they do in the recipe, I think they add texture and maybe thicken the filling a little through starch and absorption. I know they are missed if they are not used, so I use them.
    I will be trying this one sometime. It's much easier than my own.

    I think we would love this and I'm actually saving this recipe probably for Christmas Eve I love the red and green colors on top and the lettuce and our big meal is usually on Christmas Day but all the kids are normally home a little bit early from work on Christmas Eve although most have to work I think this would make something special it's something very good

      @@yesterkitchen as soon as you said you had your family had it for Christmas and then you put the fresh tomatoes in the green chilies in it I thought oh yeah and my family is absolutely nuts about Mexican and that type of thing I thought this is it this is it it looks a little Christmassy it's totally different than ham and turkey oh yeah oh yeah oh yeah and and totally not hard to fix I may go ahead and roll them up just so they're done up just a little bit ahead of time and I'm sure about how much of the stuff always there to go on everything I can always make extra rice extra sides and all that stuff if I need to you know the drill chill and I thank you very much for sharing these old recipes I love them a lot of these were the years that I grew up and was first married and remember these recipes but I haven't made them for several years and some of the even older ones I make all the time

    I think it would be interesting to vary the kind of cream soup you used....cream of celery springs to mind as being tasty in this. What do you think Jill?
