    Here’s your recipe!
    3-4 Lbs. Bone-in Chicken, Mabel used Legs and Thighs (and we now know how to clean the thighs) Water (see directions for measurement)
    White Vinegar (see directions for measurement) Your Favorite Seasonings to taste (see directions for particular spices and measurements)
    Flour (see directions for measurement)
    Vegetable or Canola Oil (see directions for measurement)
    Take your chicken (bone-in, skin on, as much or little as you want) and soak it in equal parts water and vinegar for about 5 minutes (enough combined liquid to cover the chicken). Rinse well. Pat the chicken dry with a paper towel. Season it with your favorite seasonings. Mabel used thyme, salt, pepper, and garlic powder (to your taste - about 1/2 - 1 teaspoon each).
    Use a bowl, paper or plastic bag with flour in it and toss the chicken until it’s evenly coated. Start with 1 cup flour and add more as needed. Fill a skillet with cooking oil, enough to slightly cover the chicken, at medium-high heat until it’s really hot, but not burning. Mable used cast iron which is best for this as the heat will maintain the oil temperature throughout cooking, but use what you have. You can test the oil with a small amount of flour. When the flour starts frying, you know it’s ready. Place your chicken inside and put a lid on it. Cook for 8 minutes, then flip the chicken over. After you brown the other side, remove the lid. Cook the chicken while flipping both sides over again for another few minutes, until golden brown. For food safety, fried chicken is best when the internal temperature reaches 165. It is best to use a meat thermometer to test this. Remove your beautiful chicken and place on a dish lined with paper towels to soak up any excess oil.

    Holy cow, I need this chicken in my life! I also love my cast iron, and it has a story 😄 My Dad found several brand new cast iron pans in a box at the dump in the mid 1940s, shortly after my parents were married. They were rusty, so he cleaned them up and my Mom used them daily. She gave them to me about 35 years ago, and I still use them almost daily. I checked the markings on them several years ago. One is around 90 years old, the other is close to 100 years old! They couldn't afford good cookware, but ended up with incredible treasures!! Until she died, Mom was always so excited every day when I used them, and I never tired of her telling me how my Dad brought them home to her. When I learned to make eggs at 8 years old, it was in these pans! This fried chicken recipe will certainly be made in these pans! I condensed the story, but it is still a good one, to me. I am loving this recipe series, thank you!

    Ok Jill, I made this fried chicken and OMG my family lost their mind at how good it was LOL I did use bone in skin on breasts so those do cook longer but it was soooo good. I then used the drippings to make homemade gravy over mashed potatoes and it was the best dinner we've had in awhile. Everyone is requesting that I make this again ASAP and I agree :)

    Been loving your book. This is one of my fav recipes from it. Love the story behind it :) Everyday I grab your book and just open to a random page and read that recipe LOL This was one of the first ones I saw and knew this book was going to be wonderful.

      @@yesterkitchen I will for sure. I've never made homemade fried chicken, always scared me LOL Plus I never had a good recipe to go off of. This sounds like a nice easy but delicious one to start with. Pretty straight forward but enough spices to make it amazing. I only live about an hour from Toledo so it resonates with me :)

    I'm going to try this once the weather cools off a bit, fried chicken is one of those things I've always failed at but it's one of my favorite foods. I have fond memories of my Aunt Delta June's (how's that for a southern name?) fried chicken and sweet tea, hers was fried in lard. I never think to plan ahead and when I want to make fried chicken the recipes almost always say to marinate it for 24 hours, so this will be perfect when I decide a couple hours before dinner to make it.
    Loving the book --- I'm pacing myself because I don't want to finish it yet. I'm thinking of cooking my way through all the recipes just for fun.

    Hey Jill - I have another understanding regarding the vinegar and water bath of this recipe. It may or may not be correct.
    In the mid-1970s, I inspected food markets in low-income neighborhoods (South/Central Los Angeles, Compton, Watts, Lynwood, and Willowbrook. Ca). Some large chain food supermarkets sold chicken removed from their more affluent outlets and transported them to the lower-income neighborhoods for retail sale. I remember a number of complaints regarding buying spoiled chicken and other meats. Although the markets claimed the meats were transported and held in warm car trunks, I and other inspectors found meat food handlers soaking and rinsing the odors of some meat products using vinegar or lemon. It would not surprise me if the vinegar and water bath employed by Tawanna's Grandmother was for adapting to the market's questionable practices and removing strong odors coming from the chicken she bought. (P.S. When instances of this practice were observed during inspections, cases were filed with the District Attorney's Office for the retail selling of spoiled and adulterated meats.)
