I think I will add chicken just to increase the protein and because my guys love their meat LOL I"m assuming you used shredded chicken? That's what seems like would work

I had a coworker who made enchiladas that were very similar to this. But here in New Mexico we only use fresh roasted green chiles!

Gringo green Chile casserole..
This would've been an abomination in my house..
But that's only because I was fortunate enough to grow up in NM, where we put up Fresh Green Chile every late Summer! No canned chile for us. And frozen Chile doesn't have the funny taste that comes from canned. But, I suppose this is wonderful for those not used to having the good stuff on hand. Thankfully, these days it's easier to get Green Chile from NM (especially from Hatch or Lemitar) in various States nowadays.
I'm very happy to have access to Superior Green Chile ( Hatch, Lemitar, or Chimayó) we also enjoy Green Chile Powder and Red Chile Powder. Red Chile is Dried Green Chile(from the sun.. usually strung with twine to make gorgeous Chile Ristras)
Hi ledzepgirl! Oh I know but you've been with me for a while so you know how much I love to celebrate family recipes! Especially when you read Ashley's story in my book. 😊 But yes, I love the food in NM, especially hatch chilies! I always order Christmas when I'm there, it's so good! But so is this very American casserole. You are quite lucky to be in NM and have these wonderful chilies!

My FAVORITE part of being spoiled and living here in NM is being able to have my Chile more often than not, "Christmas" which is both Red and Green together.. Life is to short!!🤣🤣🤣

I am the youngest of nine children and as my screen name tells you there’s loads of testosterone around our supper table. My mother made almost the same meal my mother used the cream of trinity 1 can of cream of mushroom 1 can of cream of celery and one can cream of chicken with a large can of chicken meat served over tortilla chips or corn chips one can fire roasted green chilies and can of Ro-Tel
