Direct from Spain, Gazpacho Andaluz…A Cold Soup with a Warm Heart (and lots of yummy things)

  • Today we're travelling to 1979 to explore the history of Gazpacho (what is that?) and we're making the true Spanish version! So Much Yum!! You're gonna love it! This is one of my childhood food memories and still one of my favorite dishes!

    Here’s your recipe!
    4 cups day-old French bread or hard rolls, cubed
    1 1/2 cups cucumber, peeled and diced
    1 medium green pepper, seeded and diced
    chicken broth, approx. 2 cups
    2 cloves garlic
    2 tsp salt
    1/2 cup olive oil
    1/4 cup red wine vinegar
    2 lbs. ripe tomatoes, seeded and chopped
    Place bread cubes in shallow dish and cover with chicekn broth 1 inch deep. Let bread soak turning once. Combine cucumber, green pepper, garlic, sale, oil and vinegar in blender or food processor. Blend smooth. Add half the bread and blend again until smooth. Pour into a bowl. Blend remaining bread and tomatoes and add to bowl. Mix well and add more salt or vinegar if desired. Chill well and serve with desired accompaniments: chopped cucumber, chopped tomatoes, sliced green onions, sliced Spanish olives, crumbled bacon, chopped hard boiled eggs and/or toasted slivered almonds

    I've never had Gazpacho before but I can see where it would be very good, especially the bread to thicken it. Any time I have vegetable soup, I always bust up a bunch of crackers into it and stir until they get mushy and thicken the soup until it's more into a stew. Love that lol! Cheers Jill!

    I remember in the 70’s a family friend made the American version (no bread) for her dinner party. Wow were we impressed. And the food processor was very popular then too.
    In 1981, I received a pewter-type soup taurine (with ladle and lid) and a matching open bowl as wedding gifts from my Spanish Aunt Olga. She said it was a set used to serve gazpacho. The bowls could be chilled so the soup and sides/garnishes stayed cold. Brilliant!
    She recently passed away, so now I think I’ll make your authentic version in her honor and serve it for our Farewell to Summer dinner.

    I am from Andalucia and I appreciate this video. Very well explained and accurate, however I never heard of using chicken broth, the only liquids we use are olive oil, vinegar and the juice from the tomatoes, sometimes add cold water or ice cubes in case you want it more diluted. Another option for garnish is hard boiled eggs and croutons. In some parts of Andalucia we also add cumin powder to gazpacho. Thank you for making this great video and for giving us the history. ❤❤

The actual recipe did suggest ice cubes but I highlighted that in my "soup on the rocks" video. Very American version but very good. But I feel great knowing that I got the approval from a native!!

    Gazpacho is the thing everyone makes when they get a new food processor or blender, there's ALWAYS a recipe in the booklet that comes with the machines.
    I've never been a fan of gazpacho without the bread, it's a little tomato-juicy and I just want to add vodka to it --- but gazpacho _with_ bread is delicious! I like mine with a nice glug of olive oil on top and some crunchy Maldon salt.

    Recommend Cajun Chef brand Tabasco sauce has a lot of flavor and some heat, Tabasco brand went to a high grade vinegar many years ago, that’s all you get is heat and vinegar.
