RESTARTING with bonus: starting from scratch vs. a starter pack
This past spring, in keeping with the instructions in the Bible to remove all leaven from the house when observing Passover, I did one of the hardest things I’ve ever done! I threw out my sourdough starter, my cherished sourdough starter. I share a small bit about my why in the video.
Since I’m RESTARTING my STARTER, and since a good friend sent me a precious (I tell why it's SO precious in the video) Sourdough Starter packet from @Breadtopia, I decided to see if using a sourdough starter packet was worth it!
But I didn’t restart with just ONE sourdough starter. Oh no!! I restarted with TWO! The Breadtopia packet has wild yeast cultures with organic whole wheat. The second starter was made from scratch and gathered the yeast out of the air.
I use freshly ground Kamut flour for both my starters. I really wanted to use bread flour like Breadtopia instructed, but when I went to the store to buy some, I just couldn't bring myself to do it! Check out WHY at 06:12 in the video.
I also tweaked the amount of water and flour I use in my Starter made from scratch based on what I learned from Breadtopia. That's at 08:50 where I talk about weight vs. volume.
I break down why I use Kamut in my bread recipes in my blog, “Why Kamut Sourdough?” - www.sweetherbinlivin.com/bread/why-kamut-sourdough
STAY TUNED TO THE END TO SEE WHICH STARTER TURNS OUT BETTER!

Please explain qht you say erb, the word is Herb after all you dont say ead instead of head, or ands instead of hands. I love your channel, but that word is driving me nuts.
I really appreciate the love 💕. As for my pronunciation of the word “herb”…. Welllll, saying herb with a silent h is how I learned to say it! Like honest, honor, and heir, for me, the h is silent in the word herb. Most people I know in the States say herb 🌿 with a silent h. I have friends in Europe and Australia who pronounce the H in the word herb. We do pronounce the H when we say the name “Herb.” 🧍♂️ I really don’t know why that is. But after years and years of using a silent h, I’m not sure I can make the switch. 🤪
I use the h in herb. Typically, this is how we say it in the U.S.
Thank you! Now I need to wash the 100ish bottles I have floating throughout my house that I didn't know how to wash but didn't have the heart to toss.
Right?! 😂😂😂
Please have correct information. Vitamin E oil has anti oxidant properties but it is definitely not preservative.
You are correct that Vitamin E has no antibacterial properties. That means it can’t stop bacterial growth. However, due to the antioxidant properties of Vitamin E, it does help extend the life of our salves. Keeping with the definition of preservative of "prolonging life", Vitamin E prolongs the life of our salves. Using the term preservative fits when using this understanding.
I do want to learn more about the high and low notes. My favorite essential oil smell is ginger.
Ginger is warm and delicious. I prefer it as an oil over the tea, lol. Mr. Sweet and I did a video together about which tea we prefer - ginger or peppermint. I'm Team Peppermint. Mr. Sweet is Team Ginger. Blended together the two teas are wonderful! You should watch it. It's a fun video. But I digress! A video covering the differences in notes is on my to-do list. I hope to have that out soon, so keep an eye out! Thank you for your feedback.
I love the cayenne with cat’s claw. At first I was a little put off by the lack of a strong smell and a quick cooling or warming sensation. After all that is what we are conditioned to expect. I was amazed! It really works.
How do you infuse barks/roots (like the cat's claw)? Is there a ratio? I know you do it different than leaf herbs filling the jar. I am interested in making that cayenne/cat's claw salve for my hubby.
Yes! I used 1 cup of dried cat's claw bark in 12 ounces of olive oil when I made my latest cold infusion. Dry and Cold infusions are a bit different. You can find the basic recipe for both here: www.sweetherbinlivin.com/herbs-essential-oils/herbal-oil-salves-infusions
I’ll have to find the right combination of herbs to make a drawing salve. Typically we’ve just bought one from an herb shop.
What kind of drawing salve are you looking for? There are several different kinds.
Ben is watching this while eating an apple.
Awesome. Thanks, Ben! 🍎❤️
I have a ton of lemon balm growing, it has taken over a lot of space. To make tea or tinctures, how long do I need to let the leaves dry out before I can make something with them?
You can use them fresh or dry to make teas or tinctures. When using fresh herbs, I typically use 4 ounces of herb in 16 ounces of menstruum. I use 2 ounces of herb in 16 ounces of menstruum when using dried herbs. The time it takes to dry herbs can depend on your drying method. Did you see part one where I dried my herbs in my dehydrator? czcams.com/video/c9Z5oQEVIM8/video.html

I just like simple vanilla.
That sounds like a yummy option. I might try that for the winter, but I’ll need to purchase vanilla essential oil. I think that’s one I DON’T have.
@@SweetHerbinLivin I love the warmth of vanilla. I do like pairing it with other oils like orange, clove, clary sage, and peppermint. (Not a specific blend, just a list of oils that I like pairing it with.) But, I love it on its own.

Chalk labels can be funny when using the chalk pens.
I love the idea of having some toilet spray, but I don’t have a good place in my bathroom to keep it out of children’s reach.
Keeping the spray out of the reach of kiddos is important!
I haven't tried this before, but I think I would use lavender, patchouli, and peppermint... that's a blend I like a lot. How long does this shower gel last you? Would need a warmer blend for the wintertime. I'll have to think about what that could be...
That sounds like a great blend! This should last a couple of months or so.
I love this video 💚 thanks for sharing Beth 🌹🌹🌹
Thank you, Staci! I really appreciate your feedback.
My favorite essential oil is lavender. What would be a good oil to mix with that?
Lavender and peppermint often blend well together. They work very well together in relaxing muscles and nerves and helping let go of stress. A good question to ask is, "What are you using the blend to help with?" Lavender blends well with sweet orange, bergamot, lemongrass, patchouli, vetiver, ylang ylang, and frankincense!
@@SweetHerbinLivin definitely not ylang ylang. I can’t stand that one. I’ll try peppermint

I really want to do this. Thank you for explaining how to do it. I’m a big fan of Dr Bach and his research
You’re welcome. It’s so easy to make a flower essence. I appreciate Dr. Bach and all he did.
Just so you know. The trick don't add salt when doing the autolyze. The salt is fighting with the water. If your doing whole wheat it does take extra water.
Good to know. I’ll make sure to not add salt until the recipe calls for it!
Also, isn’t soft white flour used for pastry, muffins, and cakes? Hard white would work with Kamut. Maybe I misunderstood you. Blessings!
Hard Red would work better with the Kamut as it has a higher gluten content. Soft white is better for cookies, cakes, pies, pastries, etc. I tried using soft white to see if it would mimic traditional bread flour in the recipe. I haven’t done that again.
Thank you so much! Please keep experimenting 😊
I’m enjoying watching you! Thank you and God bless you for helping all of us learn too. I just started milling my own flour a few months ago, it’s awesome . I just made a first time levain using The Fresh Loaf’s Honey wheat and barley loaf recipe. I accidentally added too much extra water at the end of cooking the barley. I believe this made the dough too wet, as it was sticky and unmanageable. I’ll try the recipe again because the flavor was phenomenal! Please keep experimenting too. I’d like to try your recipe. Where do I get it, please?
I’m using the recipe from The Rose Homestead and the levain from The Perfect Loaf. It’s so much fun playing with sourdough!! I’ve been making spelt sourdough bread and it’s been turning out well. I don’t know if that grain would work for you in the way that kamut does, with no aches and pains. The site which started me on spelt sourdough was Mary’s Nest. She has a very simple recipe which works, and I know that she also uses other flours so you might find something helpful to explore there.
Spelt might work. I've used it many, many moons ago. I may see if I have some and try that out as well! What a great tip. Thanks!
You’re welcome; hope it’ll work for you! Mary’s way of doing it is so uncomplicated and quick compared to most videos; you might like that too. :)
@@franciewalls5830 - Oh yes, I used Mary's recipe from the Rose Homestead in this video. It's a great recipe. I think I just need more water, but I do like adding the levain in as well. I've tried more water since this video and it turned out very nicely!
Your starter is too RUNNY...it shouldn't pour! I finally got mine right, after almost 5 YEARS!! Mix by WEIGHT not by VOLUMN, do you use a digital scale? Big Help!! My oven also has a "proof" function, DO NOT USE IT!! IT's waaay too hot!!! you want to have WARM 72*-76* the oven proof is 90* 0r MORE! ( Rose Homestead, Mary is the sweetest ever) I mill Too! Good Luck!
I had let my starter get thin! I don't think I even realized how thin! I do use a scale AND I haven't been using the proofing drawer anymore. I have been using my stove top "Keep Warm" area, with a trick added in, to keep the levain and the sourdough itself at the right temperature. Thanks so much for your feedback. I'll double-check my starter to be sure it's thick.
I love this recipe. I have a very strong sense of smell and find most scented soaps and foams to be overpowering. I don’t “notice” the scent from this when using it. But it is there and quite pleasing. It’s nice to wash my hands and not feel like I’m using an air freshener for soap.
Glad you like it. It doesn’t leave your hands with a strong smell which means it doesn’t get on your contacts.
Thanks for the recipe!
This is one of Mr Sweet’s favorites.
