Sourdough: Spring Water or Purified Water?

  • Are you confused about what kind of water to use for making sourdough starter and sourdough bread? I WAS TOO!
    In this video, I share what I learned when I began exploring the effects of using purified water versus spring water when making sourdough starter and sourdough bread. I compare the effects that these two types of water have on the fermentation and overall quality of sourdough bread.
    The more I have baked using sourdough starter, the more I needed to uncover the mysteries behind water's role in breadmaking so that I could be confident in my choice of water when making sourdough starter and sourdough bread.
    As I began my journey making sourdough bread, I made things even more challenging for myself in two ways: One, I don’t use bread flour, I use Kamut flour. Two, I mill my flour from the Kamut berries myself.

    We’ve experienced better results with spring water at our house. We feel better drinking it too.
    Maybe it would be different if we were filtering it directly at our house vs buying it

      Thanks for sharing this, @vagabondarts! I'm so glad for the feedback. While I've learned the benefits of distilled and R/O water and getting minerals from other food sources, some people indeed prefer the taste of minerals in their water and in their sourdough. I was so glad to find out that using R/O water wasn't going to harm the yeast in my starter!
