  • Today we're travelling to 1956 to learn the history of the Benedictine Sisters of Peking. Who were they and why are they cooking meatballs? Well, they cooked much more and I can't wait to tell you the story of these sisters that time has sadly forgot.

    Here’s your recipe!
    1 Lb. Ground Beef
    1 Egg
    4 TBS Cornstarch, DIVIDED
    1 TSP Salt
    Dash Pepper
    2 TBS Onion, Finely Chopped
    2 TBS Vegetable or Canola Oil, DIVIDED
    1 Cup Pineapple Juice
    1 TBS Soy Sauce
    3 TBS Vinegar- Rice, White or Apple Cider
    6 TBS Water
    1/2 Cup Sugar
    4 Slices Canned Pineapple, Cut in Chunks
    3 Green Peppers, Sliced into 12-15 strips
    Mix ground beef, egg, 1 TBS cornstarch, salt, onion and pepper. Form into 18 or more balls. Brown in 1 TBS Oil (more if needed). Drain.
    Pour 1 TBS oil into a large skillet. Add pineapple juice and cook over low heat 3-5 minutes until warm. Mix together 3 TBS cornstarch, soy sauce, vinegar, water and sugar. Pour into pineapple juice and cook until mixture thickens. Stir constantly.
    Add meatballs, pineapple and green pepper. Heat thoroughly and serve hot.
    Serve with white rice if desired.

    Hey Jill that's a great story about the Nuns, their work and unusual journey! Looks like a tasty recipe. The green pepper seems out of place but I guess it works!     Hi Jill...In my (not so...) humble opinion pineapple and green pepper are a match made in culinary heaven! So good with nearly all kinds of protein. These look delicious.

    Hi Jill! The history of this dish was absolutely fascinating; and you did an excellent job explaining it all. We love meatballs and sweet and sour is a favorite flavor profile of ours. The meatballs look perfectly seared and the sauce you created looks so luxurious. Beautiful plate of food! We hope you are enjoying getting settled back at the lake house.     These look delicious Jill! I really enjoyed hearing about the history of the Benedictine sisters of Peking. Glad they were able to relocate safely to Japan and preserve the recipes they learned. I have had a similar recipe to this but I’m not sure (or can’t remember) what cookbook it was from l. I just remember it had peppers and a delicious sweet and tangy, sweet and sour sauce! Looking forward to trying this

    My Mom used to make something very similar, but with cut up boneless chicken thighs. I learned how to make it over a phone call with her when she lived in CA. When she moved in with us, I would try to surprise her by making it (which I did often), but she would smell it cooking and get surprised a little early lol. It was one of the last meals I cooked for her, so this recipe brings back memories. Thank you ❤

    Green Giant back in the early 80’s made a boil-in-bag (remember those!?!) version of this that looked almost identical to this, with the addition of mini carrot sticks.
    I loved those things, and this brings back many memories.

    Thanks for sharing story of Peking Nuns; I enjoy the history. Just an FYI: Never add cornstarch to a warm, or hot liquid because it forms lumps. Always add to cool, or cold liquid. The saucepan still had lumps in it when meatballs were added. Learned from mom, grandma, (home ec class 1956), and Chinese cooking classes 1970's. Yummy!🥢🥣🍚

      @@yesterkitchen ... I was in a total state of shock! I didn't really think anyone reads comments. I suppose I should have added to make a "Slurry" 1 part Corn Starch or Potato Starch to 2 parts cold water before you start stirfrying then stir it up before adding to cooking. Turn heat up and stir it in. Anywhere from 1/2 tsp to 2 tsp water to 1/2 to 1 TLBS to 2 TLBS water. This tip is for budding cooks; we all started from the begining.
