I am a home cook. My recipes posted on my channel are what I make and bake for my personal experiment and use. I make gluten-free recipes and regular dessert and meal recipes.

Whipped Shortbread Cookies
Whipped Shortbread Cookies
This is one of the easy recipes for Christmas cookies. The taste and texture are pretty much like press cookies.
Ingredients:
1 cup unsalted butter, softened
¾ cup powdered sugar
1 tsp vanilla extract
2 cups all-purpose flour, sifted
2 tbsp cornstarch, optional
½ tsp salt
Sprinkles, optional
Method:
1. In a stand mixer bowl with a paddle attachment, cream the butter until smooth.
2. Add powdered sugar and mix well for 3-5 minutes until light and fluffy.
3. Add vanilla extract and mix well.
4. Add all-purpose flour and cornstarch, and mix just until combined. Do not overmix.
5. Scoop the dough out into balls about ¾” to 1” diameter or about 1.5 tsp. You can then roll them by hand id wanted. Arrange them in a baking tray lined with parchment paper or a silicone mat about 1” apart.
6. Use a fork dipped in flour or powdered sugar to make an indentation on each ball. Then top with sprinkles.
7. Bake at 325 deg. F for 12 minutes or until set.
8. Let cool completely on a wire rack to cool completely. Make about 2 dozen.

How do you make this sugar free ?
You can substitute sugar with monk fruit sweetener/Stevia/or other sugar substitute. Replace the regular strawberry Jell-O with sugar-free Jell-O.

You can microwave it for 10-15 seconds and stir until it becomes liquid again.

Yummmy! I just made this recipe. It’s an excellent recipe, especially if you use a mixer.
I'm confused. Cornmeal is gluten free. So aren't both of these gluten free?
The regular version dough is made with cornmeal + regular all-purpose flour. The gluten-free dough is made with corn meal + gluten-free flour.

Loved this mix. Used two eggs instead of 1 egg 3 whites. Turned out great. Checked water temperature. Only problem cannot find this product in any of 5 stores that carry Mike's locally.😢

I saw that picture at the beginning and was like who puts lettuce and tomato on corned beef sandwich. I use rye bread and toast it then put a spiced mustard with cabbage and slices of corned beef and some Irish Swiss cheese. And heat in skillet with butter toast it on both sides to melt the cheese

I need this recipe for coating a strawberry made with fondant icing. Can you give me an idea where i can straight of use strawberry jelly instead of using sugar because jelly aleady contains sugar so that i will have a little hardening glaze and im only coating ther icing strawberry. Cna you help me with quantity of strawbery jelly and water and corflour. So I don't have to go through experimenting would save me time. Thank you If you have any new ideas of my strawberry made with fondant icing. I also have a mold for strawberry making. I'm not an expert just for fun I make cake for my closest friends it's a hobby watching CZcams I make.
You can use poured fondant for petit fours recipes and substitute the corn syrup with honey, maple, or golden syrup. There are many recipes for poured fondant on CZcams. I haven't made one yet. Hope it helps.

Milk is there just to adjust consistency. You may or may not need it. You can use water if you do not have milk.

can't regular gluten free white flour be used instead of King Arthur?
This is a test (review) for this flour video. If you want to use other white gluten-free flour, the result may be different. But it is not hurt to give it a try.
I love a good Polish poppyseed roll. Unfortunately I am a celiac and can't have gluten anymore. Have you tried any experiments with a gluten free version? If you want me to test any of your experiments, just ask. Nice job on the videos--keep them coming.
I have not tried to make the gluten free one.
I always measure my flour by weight. The King Arthur flours are 120g per cup, so this recipe uses 360g. This gives me the best results. Use active dry yeast, not instant yeast.

Have some Cherry Plums that I am going to try this with, as it looks good. I do have a question for the batter, you mention sugar but it isn't in the instructions or the video for the batter section. Is this just an oversight?

Can we use all purpose flour instead of cake mix?
The cake mix contains egg white (meringue) powder and sugar, which you cannot replace with flour. If you want to use flour, you must use natural egg whites and sugar. I have not made a homemade angel food cake recipe.

Can this be tweaked to be used as a ganache...or do you maybe have a completely different recipe for that?
You can tweak it to be a moose by folding in whipped cream but I don't know how to tweak it to make a ganache.
I just made a new loaf and it came out even better than the last. I'm trying to upload a video but probably won't be able to do it. It was a little too dense and it needed a tad bit more salt. Adding salt next time is easy but how do I make it less dense ? less flour? thank you so much for taking your time to educate me. My husband can still eat regular bread so he doesn't quite understand how big a deal this is. But I am super pumped!
I appreciate your comment. The possibility of making this bread less dense is 1. Decrease the amount of flour by 1/2 cup. 2. Mix 1 tsp xanthan gum with the flour before adding to the liquid. 3. Add 2 tbsp flax meal to the flour. 4. Mix the flour with the yeast mixture and milk until it becomes a moist paste. Then whip egg white into a meringue and fold it into the bread mixture instead of adding egg white in the beginning. I also have more gluten-free bread recipes in my Gluten-Free Food playlist if you want to try those out.
Weigh your flour. Its 30g per 1/4 cup, so 120g per cup.
Coffee22 Crazy Use a 15-20 oz. can of crushed pineapple is ok . You may set aside some juice of the 20 oz. can to add later as needed.
You left out 1 tsp salt in your sandwich bread ingredient list in the description 😊

Why the egg wash?
Egg wash is optional. It’s just.for brushing the top for golden brown color. My video is missing that part for the second loaf.

@wanidacarter11 well, I mixed in the rye, put them in my little counter top Oster oven at 375 for 18 minutes,for the sweetener I used wholesome brand Allulose, which is derived from figs raisins, kiwi, also I didn't have my swerve brown sugar substitute so I used chozero's liquid Carmel at 1/2 cup and a quarter cup of their honey liquid substitute. 1 I quit using Hershey's high end brand Lillies chocolate after finding out they were tagged by consumer reports last November for one of the highest levels of heavy metals cadmium and lead in their chocolate. I really didn't like the taste that well. And I used the choczero chocolate baking chips. The. Cookies were still chewy, , a somewhat darker color, grainy abitt, but not that bad of a texture. I'm diabetic so, beggars can't be a choosers analogy with me. Like your channel blessings

It doesn't need to be added but it will help soften the bread a little bit.
