Blueberry Banana Bread

  • This bread is so moist and delicious.
    Ingredients:
    1/2 cup (1 stick) unsalted butter, softened
    1 cup sugar or brown sugar
    3 large eggs
    1 tsp vanilla extract
    3/4 cup mashed banana (2 bananas)
    1/2 cup plain yogurt (whole milk) or sour cream
    2 cups all-purpose flour
    1/4 cup instant vanilla pudding mix, optional
    1 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    2 cups fresh blueberries
    2 tbsp all-purpose flour
    Method:
    1. In a mixer bowl, with a paddle attachment, cream butter and sugar until smooth.
    2. Add eggs, vanilla, and mix well for 1-2 minutes until thickened a little bit. (This will help the bread rise in the center.)
    3. Add mashed banana and yogurt, and mix well. Scrape the bowl.
    4. Add all of the dry ingredients: flour, baking powder, baking soda, and salt, and mix just until combined. Scrape the bowl as needed.
    5. Coat the blueberries with 2 tbsp flour and then add it to the batter. Stir just until incorporated.
    6. Divide the batter into two greased loaf pans (8.5” x 4.5” x 2.25”) and level the surface.
    7. Bake at 350 deg. F for 55-65 minutes or until a skewer inserted in the center comes out clean.
    Note: Cover the top of the bread with foil after 50-55 minutes of baking time to prevent over-browning.
    If using a ceramic/glass loaf pan, bake for 5 minutes less than an aluminum pan.
