Carrot Cupcakes/Cake

- This recipe is very easy to make. It's a one-bowl recipe that you can adjust and add more ingredients to suit your taste. I like raisins in mine and lots of spices.
Ingredients:
1 cup fresh carrot, chopped finely
2 large eggs
¾ cup sugar
¼ cup oil or melted butter
1 tsp vanilla extract
½ cup buttermilk
1+1/2 to 1+ 3/4 cups self-rising flour
1 tsp cinnamon
1 tsp ground ginger
¼ tsp nutmeg, optional
¼ tsp clove optional
½ tsp salt
½ cup raisins
Cream cheese frosting
Method:
1. In a large bowl, mix carrot, eggs, vanilla, and oil until combined.
2. Add 1+1/2 cups self-rising flour and salt, and mix well.
3. Add buttermilk and mix well.
4. If the batter is too runny, add ¼ cup more self-rising flour. Stir in raisins.
5. Scoop the batter into 12 cupcake liners about 2/3 full.
6. Bake at 350 deg. For 25 minutes or until a toothpick inserted comes out clean.
7. Let cool completely on a wire rack.
8. Decorate with cream cheese frosting.
