Easy Strawberry Cake

  • This cake is delicious. Easy to make. This recipe is for one - 9" round pan or two - 8" round pans. I am using 7" and 6" round pans.
    Ingredients:
    1/2 cup unsalted butter, softened
    1 cup sugar
    2 large eggs
    1 tsp vanilla extract
    3/4 to 1 cup buttermilk
    2 to 2+1/2 cups cake flour or sifted all-purpose flour
    1 tsp baking powder
    1/2 tsp salt
    3/4 cup diced fresh strawberry
    1 cup fresh strawberry halves for topping
    Powdered sugar for garnish
    Method:
    1. In an electric mixer bowl, with a paddle attachment, cream together butter and sugar. Then add eggs and vanilla and mix well until light and fluffy for about 2 minutes.
    2. Add cake flour (2 cups), baking powder, and salt and mix at low speed while adding buttermilk (3/4 cup). This may be adjusted depending on the batter conditions.
    Note: In this video, I added 1 cup of buttermilk and the batter was too loose. I then had to add 1/2 cup of cake flour to adjust consistency.)
    3. Scrape the bowl as needed, and stir in the diced strawberry.
    4. Divide the batter between two round pans, sprayed with baking spray or greased and lined with parchment paper.
    5. Bake at 350 deg. F for 45-55 minutes depending on the size of the pans you are using. Insert a toothpick in the center and if it comes out clean, it's done. Mine took 50 minutes to bake for a 7" and a 6" pan.
    6. Let the cook cool down for 10 minutes on a wire rack before inverting the cake out of the pan to cool completely.
    7. Sprinkle with some powdered sugar or add whipped cream when serving.
