Stuffed Chicken Breasts

  • This recipe can be used for stuffed pork chops instead of chicken breasts. I use a box of chicken/turkey flavor stuffing mix,( any brand will work) and prepared according to the box’s directions.
    I like to serve it with country gravy (I use McCormick gravy mix.) along with other side dishes as wanted. It’s delicious!
    Ingredients:
    3 chicken breasts
    1 box stuffing mix
    1/4 cup oil for searing
    Salt and pepper to taste
    Method:
    1. Prepare the stuffing according to the box’s directions and let it cool to room temperature.
    2. Clean the chicken breasts and pat them dry with a paper towel. Use a sharp knife to slit one but not all through to make a pocket in each chicken breast.
    3. Season the chicken breast with salt and black pepper.
    4. Stuff the pocket with the stuffing tightly. (You can secure it with toothpicks to prevent the filling to come out.)
    5. Heat the oil in a non-stick skillet over medium-high heat and carefully drop the stuffed chicken breasts down into the oil. Sear for about 1-2 minutes on each side to get a light brown color.
    6. Place the stuffed chicken breasts in a baking pan or a casserole dish and cover with aluminum foil.
    7. Bake in preheated oven at 375 deg. For 25 minutes. Then remove the cover, and continue to bake for another 8-10 minutes to brown the stuffing.
    Note: I increase the oven temperature to 400 deg. F and bake for 5-8 minutes.
    8. Serve with Country gravy or chicken/turkey gravy and other side dishes as desired.
