    Today I'm going to show you how to make carrot cake cupcakes with oats.
    These healthy carrot cupcakes are low in fat and sugar, so you can enjoy them for breakfast too.
    Also I made the cupcake frosting healthier using Greek yogurt and honey.

    CARROT CAKE CUPCAKES RECIPE
    (makes 12 cupcakes)
    Ingredients:
    1 cup ground oats, or oat flour (100g)
    1/2 cup spelt flour (65g)
    2 tbsp tapioca or cornstarch
    1 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    1-2 tsp cinnamon
    1/3 cup applesauce (85g)
    1/3 cup maple syrup (80ml)
    2 eggs
    1/2 cup chopped walnuts (50g)
    1/3 cup raisins (50g)
    2 cups grated carrots (230g)
    2 cups Greek yogurt (460g)
    2 tbsp honey
    NUTRITIONAL INFO (per cupcake - no frosting):
    134 calories, fat 3.8g, carb 22.4g, protein 3.9g
    NUTRITIONAL INFO (per cupcake - with Greek yogurt frosting):
    170 calories, fat 4.5g, carb 26.6g, protein 7.3g
    Preparation:
    In a bowl add all the dry ingredients, ground oats, spelt flour, baking powder, baking soda, salt, and cinnamon, and mix together.
    Grate the carrots and set aside.
    In separate bowl add the maple syrup, applesauce and eggs, and whisk until combined.
    Add the dry ingredients in and gently fold in, just until incorporated.
    Stir in the walnuts, raisins and grated carrots.
    Line your muffin pan and spoon the batter into each cup, spreading a bit with a spoon to even the top.
    Bake at 375F (190C) for 20-22 minutes.
    Let it cool in the pan for 5 minutes, then transfer to a wire rack.
    For Greek yogurt frosting, strain the yogurt for 2 hours using a cheese cloth. Combine the Greek yogurt and honey, and add the frosting to the cupcakes using a piping bag.
    Enjoy!

    Thank you, it turned out really good. I substituted applesauce for a banana and added a few more spices in... And I used yogurt, vanilla essence and maple for the frosting. Turned out so yum. Thank you 😊

      Hi Elena! That would be great, I use full fat yogurt, but I believe it would work using low fat too, just make sure you give it a good strain.

    Oh such a great way to make one of my family's favorite cake. I'm only sorry I didn't see this a few days ago. My daughter requested a carrot cake for her birthday yesterday, and needless to say it was in no way this healthy a version. This recipe is going to be filed for future reference.

    Thank you for sharing this recipe with us. I made it earlier today with some modifications to adapt to the ingredients I had on hand.
    To whom it may concern, I used 3 spoons of honey instead of syrup and only had walnuts, so no raisins in mine. Regular flour instead of spelt Added a bit of ginger, cardamom and nutmeg along with cinnamon and used a finely grated golden apple instead of the applesauce. To the yogurt I added a very tiny bit of low fat cream cheese because it was watery even after being strained for 3 hours, along with a touch of lemon juice and a few drops of vanilla extract. It turned out amazing!!!!! I had 3 right away 😂😂😂

      Spelt flour is just a flour made of spelt grain, but you can use whole wheat flour too.

      @@HowToCookSmarter that's what I ended up doing and they came out perfect! Use greek yogurt and sugar free vanilla pudding mix for the frosting instead and the family loved them! Gonna make more for Easter dinner at my grams! Love you recipes

    He must have practiced this recipe a lot to get the muffins and frosting light and fluffy. This recipe frustrated me A LOT! I love the ingredients and kept trying. Have whole grain flour, no spelt? Added dates on hand. Used bullet blender and pressed fluid from carrots with paper towels. Barely found cheese cloth, but that was a disaster anyway. Need more directions to get the same consistency in topping. Obviously don't stir in the liquid in a new yogurt container, like I did. I used cheap cream cheese spread, added lemon zest and juice with honey. Dug out the middle of the dense muffin, put the filling in. Picture of 3-4 day old muffin, kept in fridge. Great grab & GO breakfast, add pretty died boiled egg from Easter.

      Hi Kristin! Yes, I do make these couple of times, 3 or 4 I don't really know, but if you use all the same ingredients (except this whole wheat flour) I think you should be doing fine with the texture of these cupcakes. Love the idea of adding some cream cheese filling in the center.
