There is a faux banana jam that uses eggplant and banana extract.... And it easily gives the texture to a banana bread muffin. Mel (Cook with Mel) came up with it for a banana pudding last year before Christmas. I suggested it might work as an addition for bananas in a banana bread. She worked on it.
She just introduced her banana bread as well a month ago, using banana jam.

Made this banana bread had a great taste but the after taste was bitter. What would cause this?
I make my own sugar powder using dates,it's called date sugar.Maybe the sweetener u used caused the after tatste
Can I substitute almond flour with Lupin Flour?? I'm allergic to almonds.
Idk about lupin flour but you could probably substitute it with coconut flour too!
I'm going to try this one because I baked a banana bread recipe and it was dry.....and No it doesn't taste Exactly like the real thing because the bananas are the only thing that gives them a moist texture
Zucchini have similar texture as banana when cooked so try adding some grated zucchini to the recipe.
