My Favorite Meatloaf & Corn Casserole

  • My Favorite Easy Meatloaf
    This is my favorite very easy and tasty meatloaf recipe I often make.
    Ingredients:
    1 package meatloaf mix (or about 1.5 pounds of ground beef + 0.5 pounds of ground pork)
    1 package of onion soup mix, any brand
    2 large eggs
    1/2 cup ketchup or chili sauce
    1/4 tsp salt, optional (Note: the onion soup mix is already salty so add less salt.)
    1/2 to 1 tsp ground black pepper
    1+1/2 cups bread crumbs (or 1 cup bread crumbs + 1/2 cup quick oats)
    1/2 to 3/4 cup milk or as needed
    Topping sauce:
    1/2 to 1 cup of ketchup alone
    or the mixture of
    1/2 cup ketchup or chili sauce
    1/2 cup barbeque sauce
    1 tsp dijon or yellow mustard, optional
    Method:
    1. In a large bowl, combine all the meatloaf ingredients above by hand. Mix and knead for about 3-5 minutes until the liquid is absorbed so that the meat holds together well when baked.
    2. Form the meat mixture into a loaf and place it in a greased baking dish. Sometimes I like to make it into 2 smaller loaves.
    3. Mix the topping ingredients together and brush on the meatloaf. Set aside one-half of the sauce for adding later.
    4. Cover the baking dish with aluminum foil and bake at 350 deg. F for 30-45 minutes (bake for 30 minutes for 2 smaller loaves and 40-45 minutes for one big loaf) or until the meat is cooked through.
    5. Uncover and add the remaining topping sauce on top. Bake uncovered for another 10-15 minutes.
    6. Let stand for 10-15 minutes before serving.

    Corn Casserole
    This recipe is adapted from Paula Deen's recipe. It is easy to make and delicious.
    Ingredients:
    1/2 cup (1 stick) butter, melted
    1 can (15.25 oz.) of cream corn
    1 can (15.25 oz.) of sweet corn
    1 box Jiffy corn muffin mix
    1/2 cup sour cream
    1/2 cup shredded cheddar cheese for the mixture, optional
    1 cup shredded cheddar cheese for topping
    Method:
    1. In a baking dish, add melted butter, cream corn, sweet corn, and Jiffy corn muffin mix. Stir until combined.
    2. Add sour cream and cheese, and stir to combine.
    3. Bake at 350 deg. F. for 45-55 minutes or until set depending on the size of the pan.
    4. Add more cheese on top and continue to bake for 10-15 minutes until the cheese is melted.
    5. Let stand for 20 minutes before serving.
