Carrot Banana Bread/Cake

  • This is a very moist and yummy bread/cake. You can make a cake and frost it with cream cheese frosting or add nuts to it.
    The spices can be adjusted to suit your taste. Also, the amount of sugar depends on the sweetness of your bananas.
    Ingredients:
    1/2 cup (1 stick) of unsalted butter, softened
    1+1/4 to 1+1/2 cups sugar or as wanted
    3 large eggs
    1+1/2 cups mashed bananas (about 3-4 bananas)
    1 tsp vanilla extract
    2/3 cup of sour cream
    1/4 cup of orange juice (fresh or store-bought in a carton)
    (Note: You may add 1 tbsp orange zest if wanted.)
    1+1/2 cups shredded carrot
    2 cups all-purpose flour
    (Note: You may need more flour if needed to adjust the batter about 1/2 to 3/4 depending on the batter's condition.)
    1 tsp baking powder
    ½ tsp baking soda
    ½ tsp salt
    1 tsp cinnamon
    ½ tsp ground nutmeg
    ½ tsp ground ginger
    Optional ingredient:
    1 cup chopped walnuts/pecans
    Cream cheese frosting if making it as a cake.
    Method:
    1. In a mixing bowl, combine butter and sugar until creamy. Then add eggs and vanilla and mix well with an electric hand mixer or use a wire whisk.
    2. Add mashed banana and sour cream. Mix well until combined
    3. In a separate bowl, mix all the dry ingredients, including spices. Then add it to the wet mixture and mix just until combined.
    4. Stir in the carrot and mix well. You can add chopped walnuts or pecans at this time if wanted.
    Note: If the batter is too liquidy, add more flour as needed (1/2 to 3/4 cup)
    5. Evenly divide the batter into two greased loaf pans (8.25”x 4.25”). Level out the top with an offset spatula.
    6. Bake at 350 deg. F for 55-65 minutes or until a toothpick inserted in the center comes out clean.
    7. Let stand for 10 minutes before removing the bread from the pans to a wire rack to cool completely.
    8. Frost the top with cream cheese frosting if desired.
    Note: If making it as cake, bake in two 9" pans for about 25-30 minutes.
