Cream Cheese Banana Bread

  • This is a good bread. The cream cheese adds a nice tangy richness to the bread. I would think that you can use your favorite banana bread recipe for this.
    Ingredients:
    ½ cup (1 stick) unsalted butter, softened (or 1/3 cup flavorless oil )
    1+1/4 cups brown sugar or white sugar
    2 large eggs
    2 large ripe bananas, mashed (1 cup)
    1 tsp vanilla extract
    1/4 cup sour cream
    1-2 tbsp milk, if needed
    1+3/4 to 2 cups all-purpose flour as needed
    1 tsp baking powder
    ½ tsp baking soda
    1/4 to 1/2 tsp salt
    1 tsp cinnamon, optional
    Cream Cheese Swirl:
    ¾ cup (6 oz.) cream cheese, softened
    2 tbsp all-purpose flour
    2 tbsp sour cream
    1 egg (or use egg white only for a whiter color)
    ½ tsp vanilla extract, optional
    Method:
    1. In a mixing bowl, combine butter and sugar until creamy. Then add eggs and vanilla and mix well with an electric hand mixer or use a wire whisk.
    2. Add mashed banana and sour cream. Mix well until combined
    3. mix all the dry ingredients together in a separate bowl. Then add it to the wet mixture and mix just until combined.
    4. Mix all of the cream cheese swirl ingredients together.
    5. Divide the batter into greased loaf pans (9”x 5”) by adding the batter on the bottom, then randomly drop the cream cheese mixture on top. Then use a knife to make a swirl pattern.
    6. Repeat the process with the remaining batter and cream cheese mixture then level out the top with an offset spatula.
    7. Bake at 350 deg. F for 55-65 minutes or until a toothpick inserted in the center comes out clean.
    8. Let stand for 10 minutes before removing the bread from the pans to a wire rack to cool completely.
