  • Gluten-Free Chocolate Chip Cookies
    I use Bob's Red Mill 1-to-1 Gluten Free Flour. You can use other brands if you like but the amount of the flour may be different depending on the brand.
    Ingredients:
    1 stick butter (1/2 cup), softened
    1/2 cup packed light brown sugar
    1/2 cup white sugar, optional, if you like sweet
    1 large egg
    1 tsp vanilla extract
    1+3/4 cup gluten-free all-purpose flour
    1/2 tsp baking soda
    1/4 tsp salt
    1 cup mini semi-sweet chocolate chips, set aside 1/4 cup for toppings
    Methods:
    1. In a mixer bowl mix together butter, brown sugar, and sugar if using until smooth. Add egg and vanilla, and mix well.
    2. Add all of the dry ingredients to the mixture. Mix just until combined.
    3. Add in chocolate chips, and mix until just combined. Scoop the dough into balls of about 1+1/2 to 2 tablespoonfuls each.
    4. Bake at 375 deg. 9-10 minutes or until lightly brown. Make about 2 dozen.
    5. You can chill the balls in the fridge for 1 hour before baking or freeze them if you want to bake them later.
