Extra White Gold Gluten Free Bread Flour Blend Review

  • I found this GF bread mix at my local store so I want to test it to see how it comes out.
    This gluten-free bread mix is very good. The taste and texture are better than other gluten-free bread mix that I have tested so far. I like the spongy texture and sweet and salty taste. I recommend decreasing the amount of salt if you don’t like salty food. It is very close to regular yeast bread. Just follow the instructions on the package.
    I use all of the ingredients listed on the package but I added to the batter not in order as directed to speed up time. The instructions did not say if you suppose to use an electric mixer or make it by hand. I just assume that it needs to be made in an electric mixer since the batter/dough is sticky.
    You can form the batter/dough as directed in a shallow pan to make it like a French bread but I use a long loaf pan instead.
    The bread is very good when it is freshly baked and tasty. I warm it 1 piece at a time for 15 seconds after I kept it in the fridge and it was still soft and spongy. But, when toasted, it becomes dry and crumbly.
    Ingredients:
    1 package Extra White Gold Gluten Free Bread Flour Blend
    All of the ingredients listed on the back of the package
    Method:
    1. In an electric mixer bowl, combine the gluten-free bread flour blend, 2 tbsp brown sugar, and 1 tbsp dry yeast( if using instant yeast) with a paddle attachment for 1-2 minutes.
    2. If using active dry yeast, add the yeast in a cup, mix with 1 cup of warm water and 1 large egg, and let bloom for 5-10 minutes. Then add it to the dry mixture.
    3. Add 1/4 cup (4 tbsp) oil and 1 tsp salt or less. Mix/knead with a paddle attachment at medium speed for 4-6 minutes. If it is too dry, add 4 tbsp of water and continue to mix until blended.
    4. Let rise in a warm place for 60-90 minutes. (I put it in my microwave with 1 cup of warm water on the side.)
    5. Punch the dough/batter down and separate it into two loaves shape in a lined baking sheet. I use one long loaf pan instead.
    6. Cover and let rise again for 30-45 minutes.
    7. Preheat the oven to 400 deg. F with a bowl of water in the oven to create steam. Bake for 5-7 minutes.
    8. Then decrease the temperature to 375 deg. F and bake for another 30-40 minutes or until golden brown or insert a toothpick and it comes out clean.
    9. Let cool completely on a wire rack. If using a loaf pan, let it rest for 10-15 minutes in the pan before removing it out of the pan to cool completely.
