  • Finally, a recipe for a gluten free bread that actually tastes like an amazing regular bread with a thick crust and airy crumb. This is an artisan style gluten free bread, made with a few ingredients, very little effort, and done the same day. Hard to believe, but all the folks who are gluten free, can now start enjoying amazing bread, once again!! Enjoy
    Regarding the flour I used, here is what it says on the package: "Specifically formulated for people intolerant to gluten. Ingredients: gluten free wheat starch, dextrose, maize starch, buckwheat flour, rice starch, psyllium seed fiber, Thickener: Guar. flavoring"

    ARTISAN-STYLE, GLUTEN-FREE BREAD
    INGREDIENTS:
    • 500 grams (1.1 lbs) (17.637 ozs.) (3 3/4 - 4 cups) Caputo Brand, “Fioreglut”, gluten-free flour (this flour works best, period)
    • 5 grams dry yeast (i.e. 1 ¼ to 1 ½ tsp)
    • 400 grams (400 ml) (14.1 oz) of luke-warm water, around 80-degrees F
    • 10 grams salt (i.e. 1 ½ tsp)
    • 12 grams (3 tsp) extra virgin olive oil (EVOO) plus more for mixing
    • Some extra gluten-free flour for dusting
    Process
    • Add yeast to the flour, and then add the water, mix to incorporate (before you mix, coat your hands with EVOO. If using a spatula to mix, coat the spatula with EVOO)
    • Then add the salt and mix in until incorporated
    • Now add the EVOO and continue mix (use the pincher method, which is to squeeze the dough while mixing)
    • Once all ingredients are mixed thoroughly together, let rest, covered, for 10 minutes
    • After 10 minutes, coat your hands with some EVOO and shape the dough into a round shape (like making a large meat ball)
    • In a proofing basket (or bowl), sprinkle it generously with gluten free flour (this will help prevent the dough from sticking) and then place the dough in the basket
    • Sprinkle some gluten free flour on top of the dough and cover with a kitchen towel until it doubles in size, which is typically 3 - 4 hours
    • Place a Dutch oven with its lid (or any other oven proof bakeware and lid) into the oven and preheat the oven to 450 degrees F
    • Carefully remove the hot Dutch oven from your oven, and carefully place the dough inside. Score the top of the dough with a bread lame (or you can cut the top with scissors) Place lid on top and cook in oven for 30 minutes with lid on
    • After 30 minutes, remove lid and cook for 10 minutes.
    • After 10 minutes, change setting on oven to broil and broil for 5 minutes (this will add an amazing color to the top of the bread)
    • Then remove the bread and let stand 30 minutes. Enjoy 😊

      @sissy kim yeah. I followed the recipe the way. Only thing I might do differently is adding the salt with the yeast. I had trouble distributing the salt once it became a dough

      I think if you use other gluten free flour and substitute 2 tbsp. of the flour mix with psyllium husks it might be pretty similar.

    Hi! I was diagnosed with Celiac disease about a year ago. We have been using this recipe for a few weeks now. Each time I make it it gets better! I found this video was shared in a celiac support group on Facebook. It has changed my life!!!! I have also made your pizza dough and literally cried because I could eat bread and pizza again that actually tasted like the real

      @@cockneydoll I see you also commented earlier and I responded to you noting that this recipe uses Caputo brand, "gluten free" flour - one ingredient is "gluten free wheat starch" which is noted right on the package - so I am just wondering why you are saying this is not gluten free? If so, then you would be accusing Caputo of false advertising so I would be careful with your claim - it really doesn't matter to me, I'm just trying to help clarify. Perhaps you should contact Caputo if you have any questions or concerns. Just a thought

    I just made this today. It is literally perfect and is exactly as it comes out in the video. I wish that I could post my pictures. It is so delicious! Soft crumb, crunchy and chewy outside, perfect mitigator for butter or olive oil and herbs, every kind of sandwich, breakfast bread etc. It is a game changer for those of us who need to/like to eat GF.     I instantly shared this video with my partner. She is always on the look out for GF recipes. Ever since I was diagnosed as being Gluten Intolerant, I have switched from regular bread to GF bread, and I am always struggling to find the best brand. I can't wait to see how this turns out for us.

      I’m in Perth and I only use Well and good. I’ve been a coeliac since 2014 and it’s genuinely the best flour and bread mix I’ve ever had. You can buy the bread mix in bulk on catch of the day at about $5 a loaf and they come out huge. I put mine in the bread maker overnight and wake up to fresh bread. It’s a small win 😍

    This really is excellent. For those coeliacs in the UK, the recipe works just as well with Juvella. Since diagnosis a few years ago my son has not enjoyed bread so good!

    Thank you so much for this recipe! My daughter and husband have Celiac. We did research before we used this flour to understand what wheat starch is. We were hesitant to use it but after researching what wheat starch is we were comfortable with it. This is the best gluten free bread I have ever tasted.       @@HeadWestOn90 it’s imported from Italy. My understanding is that Europe grows conventional wheat, not GM wheat. But you should look at the labeling on the product, and research European grown grain if certified GMO free is important to you.

      Celiacs like me and your wife, “may”have symptoms of being glutened from that flour. Look it up online about posts from other celiacs and decide if she wants to try it, it affects some, doesn’t affect others. Some celiacs can’t have a grain of gluten, others can consume the required up to 20ppm.

      I've found that Aldi's gluten free baking mix of very tasty. I haven't tried to make bread though. They also have a great gluten free cornbread mix and a cheddar biscuit mix. Of course, nothing beats homemade, but these boxed mixes, including cake mixes really do taste great

    This Caputo flour, and Ivo's recipe is a magical combination! My wife developed a gluten allergy about ten years ago and since then we've tried every commercially available bread (as Ivo says towards the end of this video - "not pretty") and I've baked with every possible combination of GF AP flour, tapioca starch, rice flours, cornflour, pototo flour, xanthan gum and goodness knows what else and the results have been very disappointing. I made this loaf yesterday following Ivo's recipe and instructions to the letter and we could not believe how wonderful and delicious it turned out. We now have our go-to bread recipe and a must-keep bag of Caputo flour in the pantry. Thanks for sharing!👏

      I suspect that my gluten sensitivity is due to intestinal permeability, aka, leaky gut. That allows larger molecules into the bloodstream that can potentially cause an immune response, aka, inflammation. In my case it causes arthritis type symptoms.

      @@shuumaicheck out the GAPS diet. I cannot say enough to praise it. It heals your gut, and a ton of other issues that stem from that including mental and physical stuff. A lot of parents with autistic children use it with great results. That’s also seen as starting in the gut, like most everything. If food is our medicine then the gut is the most important part of the body in a way because what it does effects the rest of the system.

    First time bread making and this turned out great! It deflated a bit after putting it into the Dutch oven, but was still tall enough. Dense, moist, and not too chewy, just like artisan bread is supposed to be. Wife is gluten sensitive and rye allergic, no reactions from this floor other than “yum! Thank you!” Next up, will try a sourdough starter with it.

    I use a round Pyrex casserole, it works perfectly well, i do have a cast iron pot but it got too heavy for me as I’ve got older, you can also try proving in casserole lined with baking paper, and when ready put strait into oven, if you are going to use scissors snip into top about a centimetre several times, you still need lid on same temperature I hope this helps for this lovely recipe!

    I've been using the Caputo gluten free flour for pizzas in my woodfired oven, and it produces fantastic results. Focaccia turns out great too. Now I guess I need to try making bread with it. Thanks for the instructions.

    This is an awesome recipe! Thank you!!!! I have Celiac and ignore the naysayers who don’t understand science. Washing starch from grains isn’t new. If it’s done properly it’s GF. Caputo is certified GF. If you’ve ever looked at Schär products you’ll see the same thing. People who are sensitive or allergic to *wheat* can’t eat wheat starch, but Celiac isn’t an allergic reaction!! It’s confusing but if a product is certified GF it has to be below 10,000 ppm and most are below 5,000 ppm. Both levels are safe for people with Celiac.

    I made this yesterday and today. A HUGE word of advice to you guys. Chef says he has not made this with other GF flours and can't say how they will turn out. Save yourself money and time. Use the GF flour he recommends. I thought I'd try to save a few $ and bought King Arthur Measure for Measure GF flour (it was half the price). What a waste of money. It turned out like a hockey puck, did not rise at all and was gummy. I bought the Caputo Fioreglut Gluten Free Flour and OMG it turned out perfect. A nice rise, gorgeous fluffy crumb and a crunchy crust. Yes that flour is pricey, but it takes quality ingredients to make fantastic food.

      Believe it or not, Walmart's own brand bread is really good. My son in law has been GF for 25+ years and has Celiac, and he prefers the Walmart brand over Udi's. He likes Schar also. He uses Pamela's flour for everything. Plus, he likes Bob's Red Mill products (I think that is the name).

    I made this today but used the focaccia recipe on the side of the bag and wow I’m so impressed! The texture is unlike any other gluten free bread I’ve made or bought. The exterior was crisp and crackly while the crumb was perfect spongey and soft. Not at all wet or gummy. I give it a solid 8.5/10. The only thing I wish to improve is the flavor. It is lacking the “yeasty” flavor that regular bread has. I plan to do a very slow rise in the refrigerator with my next batch of dough to hopefully develop more flavor. Overall, I am extremely happy to have found this flour and your channel! Thank you, Ivo!

    Looks delicious! I must say that I have to chuckle every time you say "gluten free people". People aren't gluten free but some (like me - with Celiac Disease) need to consume a gluten free diet. Please don't take this in a bad way - I just think it's funny when you say that.

    Heads up if you're actually celiac - this flour not actually gluten free (it's made from de-glutened wheat in a facility that processes wheat) and depending on your sensitivity will still cause a reaction.

      Hello...I would suggest that you drop a line to Caputo and ask them, because they say right on the front of their package "Gluten Free" and I know many people who have tired this recipe without any issues at all. I never trust gluten free products if they are made from de-glutened wheat flour. If I enter a gluten free bakery, and the products are unexpectedly good-looking, I always ask whteher they used de-glutened wheat starch, and the answer is unfortunatley always yes.

      Surely wheat starch has gluten in it?I read that the only wheat derived product that can theoretically be gluten free is wheat germ oil..but I wouldn't want to put it to the test.Manufacturers usually use modified cornstarch which is derived from maize.

    Pre mixed flours are obsolete.
    2 parts full grain millet flour, 2 parts full oat flour, 1 part buckle wheat flour, one big spoon of psyllium husks per 100g flour, as much l water as kg flour, yeast. Perfect texture, I guarantee.
    Switch buckle wheat with chestnut for sweet stuff. For shortcrust you add guar gum and locust bean gum instead of the psyllium husks.

    I was going to try this until I saw the flour had soy in it.. A big no no healthwise.. Because soy contains anti-nutrients such as phytates, saponins, and toxic lectins that can cause digestive distress and inflammation. I sure wish there was a flour that didnt contain the soy.. The bread looks great though..

      Here's what it says on the package: "Specifically formulated for people intolerant to gluten. Ingredients: gluten free wheat starch, dextrose, maize starch, buckwheat flour, rice starch, psyllium seed fiber, Thickener: Guar. flavoring" That is word for word, on the package - hope this helps :) And yes - this GF bread is amazing!!

      @@CookingwiththeCoias Under, "about this item" it says this: High quality: fioreglut is created specifically for gluten free breads and pizza crusts. This gluten free flour mix is a proprietary blend of rice and potato starches, rice and SOY FLOUR, sugar, thickeners and dietary fiber.

      I'm looking in the description of it on Amazon.. Maybe it is listed wrong.. I'm going to write them to be sure as the soy would affect me greatly but I would really love to try this recipe.. thanks

    This was incredible! My 8 year old celiac was soooo happy - he hasn't liked any GF bread since his diagnosis two years ago. Thank you so much - it sounds dramatic but this is actually life changing. The whole family couldnt believe it's GF!!

    500 g of this flour costs $28 CDN!! Thirty dollars for a loaf of bread is a bit steep.

      ...perhpas you can shop around and find it cheaper....should only be around $15 or so....but overall, it is more expensive than regular flour

      @@brittneyrussell1766 you're welcome, yes I would be as well. I know that there are some wheat flours that could be OK and those are usually "ancient grains" so not sure about this blend.

      Thank you for this information. Would not use this flour combination, because being very sensitiv to any wheat products. Would like to try as a substitude potato starch and see how this will work

      @@brigittaw.k9501 I tend to use equal parts teff flour, fine milled brown rice flour and tapioca starch as my main flour blend. I'll add Xanthan gum or beef gelatin to give it some mock "gluten". Haven't tried to make a loaf of bread like this though.

      Buckwheat is gluten free but full of lectins! Corn and rice starch , the worst! Guar gum not good for digestive problems and what are theses flavorings? Basically a bunch of craps in this mix!

    thank you for this recipe! Undiagnosed Celiac disease - gluten - almost ended my life as it caused my adrenals to fail. was known for my baking previously, so to find a good gluten free bread recipe is a treasure.....
