  • @Hollis_has_questions

I’m not surprised by the poorly hidden sugar in any of the places you mentioned. I’m not even surprised by the “But I didn’t KNOW!” wail of people who should know better, if they’d only stop, think, and read. I’m only surprised that people would rather pretend than know. They actually get upset with ME for refusing to go along with their deliberate blindness. There’s only one brand of soda that I really enjoy: Dr. Brown’s Diet Cream Soda. Not because it’s supposedly “diet” (I don’t go on diets) but because it’s effing delicious! Still, the last time I had a can was easily 2009. However, my 69th birthday is this coming 17 May, and I want a Dr. Brown’s Diet Cream Soda! The only other sparkling drink I drink on the regular (besides tap water) is clear, unflavored seltzer. I’m learning to love Greek yoghurt (Fage), thanks to Ottolenghi et al. I used to retch at feta, referring to it as “fetid” cheese; nowadays I could it it with every meal! One day several years ago I made a “Baked Greek Salad” much like something that went viral on TikTok but years before. And I fell in love with feta ❤😊 It’s sad that nobody besides me has commented. This is a conversation worth having. Thanks for starting it.

  • @Hollis_has_questions

I am diehard dairy, but in the past year or so I’ve started occasionally drinking Califia Oat Milk when I’m not having my once-a-day 8 oz. 1% skim milk mixed with date sugar, instant espresso, and ~4 oz. heavy whipping cream - I said “diehard,” right? - for breakfast. Califia is what’s on my Florida Publix shelf, and I don’t add any sugar to anything other than my “breakspresso” in the morning. If I need anything sweeter than natural, I use silan aka date syrup. But I can’t remember the last time I used it. I used to eat more meat, but now I eat mostly vegetables, chilies, rice, grains, and tofu. Unfortunately, I’m a dairy lover, and the side effect of many of my necessary medications is weight gain. I’ll let you draw your conclusions 😢

  • @Hollis_has_questions

You DO know that, traditionally, Chicken Marbella is made with prunes, right? Along with green olives, capers, vinegar, wine and sugar, you get that “Moroccan-ish”/Jewish sweet-and-sourness that makes life a little more worth savoring.

  • @Hollis_has_questions

At 9:15 you got to the Baked Mint Rice with Feta and Green Olive, Pomegranate, and Walnut Salsa, which I just finished *DEVOURING!* Two days ago my caregiver Sandra and I made the Confit Tandoori Chickpeas with Tomatoes and all kinds of warm and HOT spices, with a refreshing Yoghurt Mint Cilantro Lime Sauce on the side (OTK SHELF LOVE). Now, that dish is so good just as it is, but I took the leftover confit yesterday and used it as a base for a Turkish Menemen, with some shredded mozzarella melted in, and crumbled sheep/goat milk feta and a large handful of roughly chopped coriander mixed in, with a couple pinches of Maldon flaked salt. This was honestly the BEST scrambled egg dish I’ve ever had in my almost 70 years! But then came today. Sandra and I whipped up the truly - not kidding (as long as you rinse and then soak your basmati rice properly) - simple Baked Mint Rice &c dish. I have to confess that I am vibrating with the joy of eating this simple, quick, enormously flavorful dish! The salsa alone is magnificent, but when the rice is properly prepared it’s true that the whole is greater than the sum of its parts! So now I’m going to get back to your review and listen to you waxing rhapsodic. Btw, I’ve had an “Ottolenghified” pantry and fridge for more than a decade: preserved lemons (I make my own, they’re so simple lol), pomegranate molasses, black limes (loomi), barberries, za’atar, sumac, cumin seeds, harissa, rose water and orange blossom water, … and I am *NEVER* without saffron! I did not grow up with these ingredients, but I’ve fallen in love with the flavors of the souk.
