I stopped there once, its right near the aquarium shop I go to and I love BBQ. It wasn't great, but it traveled about 15 minutes home so I give them the BOTD. If you are in Waterbury, do yourself a favor and go down to Hindsight BBQ, the food there was so good, I asked for business cards to put up and advertise for them in my store. I even told the owner one of my friends was a pit master in Alabama and the food there put him to shame.

Regarding the Mac and "Cheese"--I used to work in a BBQ restaurant and anytime I see the mac and cheese look like what Daym had, I know that the cooks didn't use real cheese. They use the nacho cheese that's in a large can that you might see in a Sam's Club or Costco.

If you hit North Carolina, I would recommend Haywood Smoke House located in Haywood county North Carolina. They have the best brisket I ever had in my life. You won't be able to pick it up like you did there. It literally falls apart if you touch it. Great video, thanks for sharing.

My guess with the pork puck is it was packed real tight like you said to make the portion size consistent and easy to fit on the bun.........That being said, pretty sure it wasn't fresh, probably under a heat lamp for an hour or more judging by the lack of moisture on the outside. Heat lamp dried the outside up but the inside was moist enough because it wasn't exposed.

One-time in Denton Texas. My step-brother was in a BBQ contest with brisket and dr. Pepper rub before dr. Pepper rub was a thing. It was Bangin dude. I think you got third place for it. There is a hella lot of people in the contest too so their place is pretty damn good
