Exactly this. I did this to myself trying to be lazy and thawed a steak till cooked in it's own freezer bag. All it needed was the grill marks and he's described it to a fine point.
Don't boil you steak, it's not good.
You might be right... my guess is it went from the fridge straight into the microwave or (way too hot) water indeed to defrost it... for too long. Either way one of the shittiest things you can do to your meat.

There’s a restaurant in my wife’s hometown that looks like something out of the 80’s as far as the decor goes. The nice thing is that it’s clean and they have the best breakfast of anyone around. They put right on the door, they are serving breakfast from 4:00 AM to 2:00 PM everyday. They’re closed the rest of the day. The key is to go in between 4 and 5 in the morning or 1 and 2 in the afternoon, otherwise they are packed.

my steakhouse in Williamson west virginia was actually pretty great until they jacked up the prices per person it went from 12 to 25$ per person the food was great the décor maybe a little dated with that western theme but the food still rocks because you get soo much more options including the Salad bar

Not saying don’t do it at all but restaurants require massive effort and time to run. Especially if youve never managed one. Research every aspect and ask questions of current owners. You need to be prepared for this and understand that your moms cooking no matter how banging is a tiny aspect of what goes into owning a restaurant. Treason owners that work 70 hours a week without ever cooking.
Covid regulations have also made something already difficult almost inpossible.
