@@ChrisEatsStuff We have lots of stuff that we use for sour base soup... generally we use tamarind... you can use also the Kamias (Bilimbi or cucumber tree fruit), Santol (Cotton Fruit), Batuan (Garcinia binucao), Calamansi (Philippine Lime), white vinegar and Libas (hog plum leaves).

when my mom cooks sinigang, she normally adds a lot of veggies in it like string beans (sitaw), okra, taro (gabi), raddish, tomato, pepper (siling haba), eggplant, and water spinach (kangkong). sour agent is either tamarind or calamansi/lemon for pork/beef sinigang, guava for milkfish sinigang, tomato for shrimp sinigang

Sinigang is one of the best soups we have in the Philippines.They come in different varieties from Pork Sinigang, to fish Sinigang and, shrimp Sinigang.

Yes,its the tamarind that makes it sour..chili peppers are for added flavor but we dont actually eat them, oh well u may eat them or not.. and pranking your wife would be a nice idea but sometimes seemed very impolite to do.. anyway, we would also like to meet her though..

In the Philippines we used the real tamarind especially in the province.. We also put more veggies, like... Gabi, okra, green chili, petchay or Kang Kong leafs, native string bean.

@@ChrisEatsStuff to add there are other type of sinigang that uses different ingredients to make it sour. Tamarind (most popular), green mango, guava (my fav though not that sour), katmon, kamias and more.

You know this is the first dish I learned from my mom⊠we usually use taro root to make the soup a bit thick. Most popular sour agent is the tamarind.

Pork
Eggplant
String Beans
Chili Fingers(Chili Pepper or Jalapeño)
White Raddish
Taro Root
Tomatoes
Onions
Garlic
Knorr Tamarind Mix
The soup is actually good during cold seasons. đ
Props for trying new stuff. Just so you know, traditionally rice is the base and you either drizzle or pour the food over it. That applies to most of the Filipino food. Sinigang can be enjoyed as a soup or poured over rice. You can control how soupy you want it. To balance the flavor, we often use a bit (teaspoon?) of fish sauce to balance the sourness and add umami. Fish versions will also sometimes include miso paste. Enjoyed my first watch and your mom is awesome.

Haha you're funny when you eat green chilli...you can also cut it with spoon and mix to soup if you don't want to eat that or not eating that at all. I am not eating that when I eat Sinigang though it's delicious when it mix cut with it's soup. By the way the ingredient used for that is Tamarind not vinegar. We used tamarind powder usually but in Traditional way the unripe tamarind is use. We also use kamias, unripe mango or guava as optional for tamarind.

Guys, sinigang goes well with newly cooked steamed rice specially during rainy days in the Philippines. I remember during my childhood my mom used to ask me to pick fresh tamarind fruits for her best tasting sinigang na baboy and collect kangkong from a nearby rice field. Sadly, those rice fields and trees are no longer there.

Wow! I admire how you ate the green pepper/chili. Most of us (I think) don't eat it directly. What I personally do is smash it in ''patis'' or fish sauce đ . ''Patis" with chili will surely make your sinigang experience on a next level (on most of the Pinoy dishes actually). I don't know anybody who eats the pepper like that from the Sinigang, nor dump a lump of rice in the soup. The proper way is to eat the pork and veggies from a plate of rice, use the pepper as a condiment with fish sauce, and shower the rice with some soup. We take some sip of the soup as we eat.

Sinigang is a comfort dish. We used to eat it when we are sick (fever), because it stimulates your saliva ducts to produce more saliva and began salivating at first sip of its sour soup. And, with its sourness, heat and spiciness. It helps your body to get warm...
