Sardines may get a bad rap, but they’re packed with protein and omega-3 fatty acids. Enhanced with the flavors of garlic, shoyu and vinegar, splashed with lemon olive oil and homemade chili water, and topped with sweet, raw onions, these sardines are a snack that’s packed with flavor. For the lemon oil:
4 lemons, scrubbed in hot water
2 cups extra-virgin olive oil
For the chile pepper water:
1/4 cup white vinegar
4 garlic cloves, smashed and peeled
8 Hawaiian or 4 bird’s eye chilies, thinly sliced
2 teaspoons coarse Hawaiian sea salt or Diamond Crystal kosher salt
For the sardines:
4 (3.75-to 4.2-ounce) tins sardines in extra-virgin olive oil
1/4 medium sweet white onion, halved and thinly sliced (1/2 cup)
2 garlic cloves, thinly sliced
Gochugaru (Korean chile flakes), to taste
1 tablespoon shoyu (soy sauce)
1 tablespoon apple-cider vinegar
Freshly ground black pepper
1. Make the lemon oil: Peel the lemon zest in long strips with a vegetable peeler, making sure to avoid the bitter white pith. (Reserve the lemon flesh and juice for another use.) Combine the zest strips and olive oil in a saucepan and simmer over very low heat for a few minutes, stirring occasionally. If any bubbles appear, even on the side of the pan, reduce the heat or briefly remove the pan from the heat. Let the oil cool to room temperature while the zest strips are left in to steep, about an hour. Discard the zest and transfer the lemon oil to a clean jar or sealable container. Store in a cool, dark place. The oil will keep for about 1 month on the shelf, or for several months in the fridge (just be sure to bring it up to room temperature before using).
2. Make the chile pepper water: In a clean heat-proof jar or sealable container, combine the vinegar, garlic, and chiles. In a small saucepan, bring the salt and 2 cups of water to a boil over high heat. Pour over the ingredients and let the jar cool to room temperature. Taste and adjust the salt if needed. Chill in the fridge for at least a day before serving. The chile pepper water keeps in the fridge indefinitely.
3. Make the sardines: Place the onion in a bowl and cover with cold water. Let soak until slightly translucent, 3 to 5 minutes. Drain the onion and place on paper towels to drain.
4. Carefully remove the sardines from the can, reserving the oil. Heat a medium skillet over medium high. Pour in the oil from 2 cans of sardines (or use a bit of neutral oil), add the garlic and gochugaru to taste, and sauté until lightly browned and fragrant, 30 to 60 seconds. Add the sardines in a single layer, keeping them as intact as possible. Deglaze with the shoyu and vinegar.
5. Once the sardines are heated through, 1 to 2 minutes, transfer the sardines to a serving platter and top with the onion and 1/4 cup of the chile pepper water.
Season to taste with black pepper and drizzle with 2 teaspoons of the lemon oil. Serve immediately

Dad used to use the oil in the sardines to stir fry the onions then smash the sardines into the onions. Over hot steamed rice with some chili pepper water and shoyu . We ate like kings! 😋

Canned sardines retain their spines and are an excellent source of calcium better than pills. Other tip: When in OLIVE OIL (only), they ripe in the can and improve over time. I keep the cans and I open them 7 years after buying. There is a similar dish in Spain but we do not add the sardines into the pan but instead the hot oil+garlic+vinegar+chili+whatever is poured onto the sardines in a plate (will warm but won't break). Canned fish is very popular in Spain and Portugal and sardines are the queens. We are in a peninsula and fresh fish is not in short supply but nonetheless we love the canned and I enjoyed watching that in an archipelago too.

ANYTHING from the ocean in a can in Spain is awesome - oysters, squid in black ink, octopus, clams, etc. Grab cans, a loaf of fresh bread, some roasted peppers, olives, cheese and a beer.... awesome time.

I have eaten sardine’s only a couple of times in my life (65yrs), and could hardly swallow them. My husband bought an entire box from Costco, not knowing we already had a box from last year. I made your whole recipe in the hopes I could eat them. This is absolutely delicious. Really very good. I am sooooooo thankful!!!!
Note that this recipe also works with the tomato sauce sardines, you get some olive oil in pan, fry some garlic + dried chilli flakes, pour in sauce & sardines, add a splash of fish sauce (soy sauce also works but fish sauce gives it better flavor), black pepper, simmer 5 mins and it is absolutely delicious on top of bread, pasta or white rice.

My favorite salad: boiled potatoes + sardines (I like ones in olive oil, not brined. Portuguese are truly the best! Belmar, for example. ) + red onion + parsley leaves, salt and freshly ground pepper!
Title is not lying! Made this dish this morning. My mom was immediately down as sardines was a staple food growing up in Ghana. I on the other hand, Canadian-born and didn't really vibe with sardines, am now a fan after making this dish. It is the afternoon at the time of writing this and I just inhaled the last of it! @@ThePrasadFamily Personally I like corn beef stew. Quick and easy, and so versatile. You can have it plain, or you can add cabbage or even mix in some egg.
There is also spinach stew. You can add any meat you want. I've had it with goat, beef, fish and hard-boiled egg. Both go well with rice.

We have a strong Japanese culture here in Vancouver as well.....we have the best sushi anywhere except JAPAN.....I've had sushi in the continental USA and it was fricking sad,....we pretty well have the same terrain, trees and fish as in Japan.....salmon swim from Canada to Japan and back again

Sardines and fried onions was a staple during my college days. Ever time I ate it, I'd recall the Sakadas or Filipino old-timers who toiled in the cane fields in Hawaii, or ag valleys in California. For many this was their go-to meal also. I'll try your variation next I buy a can of sardines. Mahalo for the video and recipe.

Im italian and portuguese and i grew up with caned sardines as well. Thet get a bad rap from posh and entitled people who ride there high horses but regardless what they come in they taste killer. I like the look of this! Must try!
Pinhais and Nuri sardines are pretty pricey sardines compared to kind arthur and other brands
it's cheap, garbage fish muppet. don't need to be posh to admit that reality.
My version is that i coat the fish with breading mix and shallow fry em until theyre crispy. In a different pan, i saute garlic and chillies using the same oil from the can. Always thought i was the only person who did this (which most of my friends thought it was foolish, time consuming, and waste). Thank you chef for showing this, cant wait to show this to my friends and say who's the fool now. 😭😭😭

I dont bread these. low quality canned fish will be too tender already, and often breading will soak up too much of the oil. I feel it carries too much fish flavor for many people. If you can manage to fry the breaded fish without breaking the fish into tiny pieces, you probly have some very nice quality sardine!

Tomato sauce with canned sardines is one of my favorite quick pasta sauces.
I have been, somewhat to the disapproval of my wife, cooking pasta al sarda as a lunch during the entroublement. It's sardines, garlic, parsley, raisins, and fennel topped when finished with toasted croutons and parmesan cheese. It's also the one dish I've cooked where saffron really makes an important difference to the flavor of the dish, so if you have a few threads lying around, throw them in. The dish is amazing and a lot of fun to eat with all of its flavors and textures.

This makes so much sense. I've gone to restaurants and their marinara sauce for a simple cheesestick appetizer was SO GOOD. I learned that they were basically adding anchovy paste to a basic tomato sauce. HEAVEN.

Me too, when I started the salad diet, I heat a can of sardine or tuna in oil, then mix them with spring mix salad with some onion and green onion. The taste not only delicious but it helps weight loss the best.

Made this today sans garlic. Wonderful! Maybe I didn't slice the onion thin enough, but it didn't soften or sweeten. Tasted like regular raw vidalia onion even though I soaked it 15 minutes in ice water. I licked the plate clean afterward. The oil, soy sauce, red chili flakes, and apple cider vinegar sauce is out of this world good!

Maui onions are edible right after slicing, they are crunchy and don't have an unpleasant bite. Vidalia onions are specifically from Vidalia Georgia they are similar to Maui onions. Their flavor profile is unlike a common onion. Another substitute would be a Walla Walla Sweet from Washington State but some summers are better than others for producing a sweet Walla Walla crop. Soaked Walla Walla's are a great substitute for Maui Onion. His onion made him cry- so it probably wasn't a true Maui onion thus the need for soaking.

Great dish, I’m hooked (basmati rice, on the side). My chili water lasted @2 weeks. Once the little bit of prep is done, this is a 5 minute meal.

Sardines are often overlooked but so delicious. If you don't like heads, bones or guts, there are fillets out there too.

In the Philippines we sauté sardines in tomato sauce with lots of onions then put on top of steamed rice. When we have colds my grandma with sauté sardines with lots of garlic then top it with lots of crunchy garlic then put on top of steamed rice. Garlic helps you with the colds. And definitely works. We love sardines in the Philippines. In fact sardines business is a million pesos business in the Philippines. You can never go wrong with sardines.

Looks good. A completely new idea to me! We'll try this as canned sardines I've learnt are one fish that isn't disappearing from commercial fishing and as an added bonus, it's virtually free of heavy metals that the giant prey fish and sharks have - mercury is found in all these top predators. But sardines are clean.

I just made this dish (I'm actually eating it right now as I'm typing this), and it's super delicious! Didn't follow the recipe _exactly_ because I don't have all those foreign ingredients, or didn't wanna go through too much effort just for _one_ dish (like with the lemon oil), but I used fitting substitutes and it turned out really good. Going give this a try. Wife no like sardines, but I’m crazy about them, especially with one (or two) ice-cold Primos. Mahalo plenty for your video.

yes! camping, we used to cook right in the can (probably not good for you) sauce would boil over a little, especially after adding some shoyu. pepper, salt and gochugaru was usually added too, but unnecessary when you hungry. make sure buy packed in some kine oil... other kinds no good.

I grew up eating sardines with tomato sauce on toast with lemon or calamari with my dad on weekends. Iprobably like canned fish better than fresh, but c’mon, why call it pupu.? Just call it Tae. We’re adults here, right?
