When I married my 20 year old Filipina sweetheart I woke up the next morning and realized she didn't know how to cook American food. I thought I was going to starve the next few years. The first night she fixed me pork adobo. It was so good I wanted it the next night also. Never tasted anything quite like that before. By the end of the first month she had me eating most everything she cooked. There are still a few dishes that I prefer to skip, even after 48 years together now. Our grandkids have learned to enjoy the food their lola taught their parents when they were growing up. Another generation of those who love Pinoy food.

LOVE this video. Filipino food is so underrated and misunderstood. Knowing this, my Filipina wife and I opened up a Filipino Food Truck here in our town. We are a small truck, so our menu is limited.
We do serve Lumpia. It’s most popular! Pork Adobo, Chicken Pancit (noodles), Tocilog, Lechon Kawali, Pork Humba and Pork Sisig are also on our Menu.
Most who haven’t tried our food before thoroughly enjoyed it and didn’t know why they waited so long!
You must try Pancit and Lechon Kawali!

Filipino dishes are mostly salty and savory because we always have rice with it. The rice neutralises the saltiness or sourness and the dishes are meant to be shared with the family so the portion is eaten in small quantites along with a whole lot of rice.

Hello guys. Well, Sinigang has been recently adjudge as the best veggie soup in the world by the food reviewer TasteAtlas which comprises more or less 200 food critics from around the world. At first try, some would not appreciate the sour tangy taste of the broth. But as you repeat a couple of times then surely your tastebuds will get accustomed to the taste. It's really a comfort food and it's a winner if you always paired it with rice. Adobo on the other hand, is also a comfort food. Yes your right, there are many versions of adobo: all meats can be had with this dish including veggies. Both dishes are prepared with subtleness in mind so no overpowering of the flavor. Btw, most Filipino foods are not spicy or hot. That spring rolls we call it Lumpia. Lumpia too comes with different varieties. There is that lumpia plain veggie, lumpia with meat and veggie and lumpia with plain meat whether pork, chicken, beef and other meat products. Next time before trying any Filipino dish, please say, "Kain na!"(pronounced: ka-in na!) meaning "Let's eat!"

Well done. I like the cheat sheet, it encourages learning and doing your homework. It is a unique approach. For foods with that come with sauces, it is alright to try them with or without them. Many Filipinos also prefer to eat foods without the sauce that it comes with.

A lot of times, I eat the Lumpia Shanghai without the sauce, it’s so good on its own. But I do like it with rice. Eric has good instincts!

when it comes to Lumpia, ALOT of filipino places/restaurants in the US seem to use the vietnamese sweet chili sauce as a dipping sauce, my family uses the Lachoy sweet & sour sauce for decades, a local place has their own custom recipe.

Excellent job with the pronunciation guys! You can call the Shanghai rolls either eggrolls or fried lumpia. There is a cold version call fresh lumpia that's worth trying.
Good job ordering white rice. Anything with broth goes with rice and almost every Filipino family has their own version of sinigang and adobo. Also worth ordering: pork sisig (an A. Bourdain favorite), kare kare (peanut oxtail stew), dinuguan (pig blood stew), beef bulalo (beef soup), pancit (pan-fried noodles), BBQ pork skewers, and halo-halo (a popular frozen desert). Most filipino restaurants in NA should have these dishes, as well as some variation of lechon (suckling pork). Most restaurants serve lechon kawali (deep fried) which is good but the slow-roasted lechon is world-famous. Consider yourself lucky you ever get to try the roasted version.
Also if you have a Jollibee close by, make sure to try the "fiesta noodles" which is traditionally called pancit malabon (wet noodles in a mild shrimp sauce).
Again good job and hope you try more filipino cuisine!

FUN FACT: Most of the name of Filipino dishes actually refers to way/method of cooking, therefore if you want to specify the name, you'll just add the whatever protein is in it.
Adobo (means associated with soy and vinegar). Naming convention for specific type is Adobong + protein source (eg. Adobong Baboy, pork adobo which you have in there). You wont regret anything adobo; Chicken, Beef, Squid, Goat, Tuna, Eel. There are veggies versions too like bamboo shoots, water spinach, sitaw (string beans). There's also a version with coconut milk (adobo sa gata). And exotic foods also can be prepared as adobo: snake, giant lizards, crocs, crickets, frog and bugs
Sinigang (stewed) also applies to whatever meat or fish is available
Lumpia ( refers to wrapping method). There is lumpiang gulay (mixed veggie;could be with or without carrots, squash, beansprout, sweet potato, cabbage ), toge (bean sprout) and shanghai style (with ground pork or beef seasoned with mince onion, garlic and ground pepper). There's also a non-fried version which is Lumpiang Hubad (Naked Lumpia) which main ingredients is palm heart and veggies, partnered with sweet peanut sauce.
Next time, please try Lechon Kawali, Sisig and Halo halo :)

Isaw (chicken intestines), Adidas (chicken feet), Chicharon Bulaklak (deep fried pork intestines), Balut (under developed duck egg), and Kwek Kwek (deep fried flour coated quail eggs). The street food or fried foods are usually dipped in vinegar. Either they mix in chillies, onions, garlic, brown sugar, soy sauce, calamansi or lemon with the vinegar.

Sinigang is an acquired taste, I've never met anyone who liked it on their first try, speaking as a Filipino from the South, it's a hit or miss but it pairs really well with our dishes like Tocino or Tapa or Inasal. I recommend those if you can find them. Also, as another soup alternative, you can tr Tinolang Tuna Isda (fish), if you can find it or find someone who can make it for you, I find it more refreshing than Sinigang.

What you’re calling “lumpiang” is just known as “lumpia”. You add the “-ng” when you have the descriptor after it (e.g. “Lumpiang Shanghai” or “Lumpiang Sariwa”). The “plum sauce” is just a regular sweet and sour sauce or sweet chili sauce. Most people eat the Sinigang with rice. Also, white rice is what Filipinos eat 90% of the time with any main dish so it’s good you got white rice. Love that you guys tried Filipino food! It’s highly underrated in the US. :)
Also, it’s funny that you guys mentions that US meats are sweeter. I actually think that Filipino cuisine is generally on the sweeter side for its savory dishes than any other cuisine.
Next time, try pancit, Kare-Kare (eat with rice), and Filipino-style spaghetti.
