The version of sisig recipe that I grew up with has a "pig skin, pig's ear (the best) with pork meat" all chopped in small pieces and mixed and fry together with onions, garlic and chili and then after cooking you top it with egg while it's still hot and mix it. Pour some lemon and viola! 😋😋😋 But I would also love to try that version though 👌😊

We have bamboo shoots here, we cook it on a season of it, most of its only available in farm areas.
we love sisig so much!! you can try pig face or belly (if pig face is not available)
deep fry it (with salt and pepper) at least let marinate overnight then fry it.
then do stir-fry the garlic onion in a butter+olive oil (ginger is optional, but normally we in our region we avoiding it).
then slice the fried meat into cubes or preferred small cuts, put it in a stir fry add salt and pepper,
Then put mayo on it (if u like u can put little mozzarella cheese) and lemon juice (if preferred spicy put cut chilies or chili flakes). Once its thicken u can put fresh egg and chilis on it--serve it on a sizzling plate put it on the stove or in the oven once it is hot put little butter on it then plate the sisig,
plus with friends and ice cold RED HORSE!!!!

    Basically, you just need:
    - Pork (we use pork head, ear, and jowl)
    - Liver (Reno Liver spread is a good substitute, and traditionally, you also include the pig's brain if I'm not mistaken.)
    - Onions (essential)
    - Chillies (if you want it to be hot)
    - Calamansi (you can use lemon if it's not available in your region. Acid is important to cut through the richness of the pork and soy sauce, so it becomes a bit lighter when you eat it, plus, it just makes it more delicious.)
    - Soy Sauce (to taste)
    - Salt and Pepper
*Eggs and Mayonnaise are optional as part of the garnish.
Here in the Philippines, we use sizzling plate when serving sisig because the additional maillard reaction just gives it another layer of flavor. If you go to a Filipino restaurant in Japan, chances are they'll serve you sisig on a sizzling plate.
But again, everyone has their preference when it comes to food. Other Filipinos can comment their preference when it comes to sisig because this is how we serve it in our household. 😉
    Great content, kuya Yoshi. 💪🇵🇭🇯🇵

Filipinos are 'obsessed' with rice 🌾 it's serve in all meal times (breakfast, lunch and dinner) we don't get tired of it as we enjoy cooking different dishes from other local regions or if we're in a hurry we just fry eggs we just can't miss it lol or if there are still left overs of rice we usually make it a fried rice (garlic rice is a must-try beside from being a healthy option it's also delicious) .. in tagalog we pair various 'ulam' to rice :)

I like it when the meat ingredient on sisig be grilled first for the smoky aroma. You should try it sometimes.

2:55 we have that but my mother doesn't allow us to use it because the blade are too sharp (as if the knife's blade isn't heh). but i enjoy cutting the spices manually, just to make it seem like I'm busy to avoid my mother's sermon.

    Sisig+sinangag(garlic fried rice)+itlog(sunny side up) = 👌👌👌

    1. Char grill the pork meat, well done. Then chop it
    2. Instead of white, choose RED onions, chop it, put on top of pork
    3. Put chopped spicy red chilis (not bell pepper)
    4. Drizzle with mayonnaise
    5. Sprinkle with fine salt and a bit of ground black pepper, mix altogether
