DAIKON (white radish or Japanese radish)
the term DAIKON means BIG ROOT
it is a winter vegetable, it contains rich in vitamin C, in Japanese cuisine it is eaten in all ways especially cooked in stews during the winter.
today you will almost always find it in large supermarkets. for this recipe choose the big ones.
in this video I present to you a traditional trick to cook the DAIKON.
eating winter vegetables like DAIKON warms our body, an ideal food to fight the cold of winter.
Ingredients for 2-3 people:
Daikon 20cm (800g)
Kombu kelp 10cm
Rice 1 teaspoon
Miso (fermented soybean paste) 1 tablespoon
Sake 1 spoon
Mirin (sweet sake) 1 tbsp
Sugar 1 tbsp
Sesame, lemon zest to taste

Miso si usa come condimento in tutti modi. In Giappone oltre 1000 anni che si mangia il miso c’è il suo perché
