Japanese-style pickle🥦🥒 🥒🥕 🍅
I like to go shopping in the open market, I find lots of vegetables and fruit with different colors, it excites me just to see them.
Taking a tour at the open market I get inspiration and ideas, walking in front of the greengrocer it came to my mind to prepare Japanese-style pickles, the one my mother used to prepare when my parents ran the restaurant business, she prepares a huge amount with the vegetables that she grew in his garden.
I have changed the dose to the right amount that can be easily managed at home.
and let's put a small addition of Japanese flavor🇯🇵
Ingredients for the total weight of vegetables just over 1 kg:
for the pickles mixture:
White vinegar (apple vinegar, rice vinegar is fine) 400ml
500ml water
Sugar 4 tbsp
Salt 1 tbsp
Soy sauce 1-2 tsp
1-2 Chilli
Kombu kelp 10cm
Favorite vegetables (total of about 1 kg)
in the video I used:
Red pepper, fennel, cauliflower, carrot, mini-onions, radish, cherry tomatoes, round cucumber. Tuber vegetables like daikon, turnip are fine, and vegetables that are found all year round like broccoli, courgettes, celery, onion and cucumbers are fine too.
