How To Make Jollof Rice || African Jollof Rice

    🍃Ingredients
    2 large red bell pepper
    2 tomato
    1 purple onion ( roast 1/2 and sauté the other 1/2)
    6 cloves garlic
    1 scotch bonnet pepper
    ** Roast bell peppers, tomato,1/2 the onion amd garlic at 350 degrees Fahrenheit for 25 minutes.
    ** Once done blend until smooth ( add Scotch bonnet pepper without the seeds) Rinse residue with 1/2 cup water.
    3 cups long grain parboiled rice
    1 tsp curry powder
    1/4 cup Tomato paste
    3 bay leaves
    Few sprigs thyme
    2 stalks scallion
    Vegetable bouillon/all purpose seasoning
    Salt and pepper to taste
    Oil.

    This is similar to what we called Red Rice here in South Carolina. Sometimes it’s added with sausage or bacon. It’s a staple dish here for Gullah Geeche culture.

    Sis, the pot looks really good, however, I noticed that it’s aluminum, which is not healthy. Stainless steel is a better choice. Much love

      That is correct, but aluminum is on the outside, for easier cooking. There is a coating on the inside that is not aluminum. So, she’s good.

    Wow. I have been trying how to make (Red Rice) what you call Jollof Rice. My southern aunts would make Red Rice, but I never learned how to make it. I looked for so long to try to find how to make it. Stumbled on this video call Jollof Rice....well....to my surprise...Red Rice because of the tomato color. Thanks. So, now I know how to make Red Rice/Jollof Rice.

    🔥🔥🔥🔥🔥 been wanting this recipe if I don’t have tomato paste, can I use oat flour instead as a thickener?

      Tomato is a vital ingredient and the paste adds extra richness, not so much as a thickener. The oats flour will not provide that. You can add more fresh tomato if you don’t have the paste.

    Does curry really go well with Jollof rice. Since I don’t eat meat like that anymore it’s hard to find a good combination with jollof so I haven’t made it in over a year.

    Why do i need to cook it for so long? With the right amount of liquid it should be 12 minutes on medium low heat and 10 off heat. Can you explain to me please? I'm just afraid ill burn the rice if i cook it for 30 minutes

      Over a low heat and with occasional stirring it will not burn. A rice like this needs to cook slow and right.

      Only 1/2 cup water was used. The moisture from the tomato and bell peppers is good enough. Just cook over a low heat.
