Stew Peas & Lentils W/ Rice & Bulgur Wheat| Jamaican Style Meatless Stew Peas

  • Ingredients:
    1 cup dried red beans
    1 1/2 cups dried lentils
    ** Rinse peas and lentils then soaked in about 5 cups water with 4 cloves minced garlic and few sprigs thyme. Soak for a few hours minimum 2 or overnight. You can half cook the peas first only because the lentils will cook faster Or cook at once as shown in the video. Cook with about 1 tsp salt.
    ** Add additional water to cook peas/lentils
    1/2 onion
    1/2 carrot
    1/2 bell pepper
    1 1/2 cups coconut milk
    1 scotch bonnet pepper
    2 stalks scallion
    Additional thyme
    1 tsp grated ginger
    1 tsp ground allspice
    All purpose seasoning
    Salt/ pepper to taste
    Dash onion powder
    For spinners
    Roughly 1 cup flour with 2 tbsp fine cornmeal
    About a 1/4 cup water
    Rice and Bulgar
    2 1/2 cup rice ( I used long grain parboiled rice)
    1 cup Bulgur wheat ** Wash/rinse rice and bulgur before cooking.
    Few sprigs thyme
    Salt to taste
    1 tsp oil
    About 4 1/2 cups water
