How To Make Plantbased Pumpkin Soup | Jamaican Style

- 1 1/2 larger pumpkin
2 cups coconut milk
2 corn
A piece of yellow yam
1/2 Irish potato ( use 1 whole potato if you want)
1 sweet white potato
4 finger green banana
1 1/2 cups spelt flour plus 3/4 cups water to kneed dough
3 stalks scallion
Few sprigs thyme
Parsley
5 cloves garlic
1 onion
2 carrot
1 whole scotch bonnet pepper
1 tsp grated ginger
2 vegetable bouillon cube
tsp onion powder
1/2 tsp garlic powder
1/2 tsp black pepper
1 tsp celery salt
2 tbsp adobo seasoning
1/2 tsp smoked paprika
1 tbsp Easispice all purpose seasoning
6 pimento berries
Pinch of salt
1 tbsp unrefined coconut oil(This add extra flavor but it’s optional).
Roughly 5 cups water
*** Seasoned to your liking
Use your favorite ground provision and seasonings.
Chocho / chayote is a known staple for soups however I did not have any on hand so if you have this you can add it to your soup. - Jak na to + styl

Yes what I do is I put the yam in water until I’m ready to use it. It won’t oxidize that way. Thanks for sharing.🙏🏽 I made a big pot of soup today. She only thing I didn’t it was Ginger.

Hello there. This is my first try at a Jamaican soup. I am vegetarian from about 25 years ago and I have meat eating Jamaican friends who would make this soup and add meat to it. I never got the chance to taste until now. I love ALL the vegetables and spices and dumplings in your soup. I made it with success and I thank you for sharing it. This came out better than I thought - there was some adjustment because I am in Los Angeles and some of the ingredients are not readily available, it is delicious and I love that the ingredients are so healthy. I am going to add this to my regular rotation

If you soak the green banans in warm water for 5-10mins after cutting off the ends, that also helps the skin to come off easily.

The fresh is always better but in a situation like this just work with what you have on hand. So go ahead and use the canned pumpkin.

Not sure about the coconut milk and oil. I will leave that out.
Ok that's fine. You can adjust this recipe as well as my other recipes to your liking. The coconut oil is optional. For me it enhances the soup.

What's Spelt flour, is it a Vegan flour and where u get it to buy.
Spelt flour is made from an ancient grain similar to whole wheat but nutritionally better. You can put it at your local supermarket/ health food store or online.

You can omit it if you can’t find any and substitute with another ground provision.

It's funny I always boil my green bananas separately then peel and add to my soups, I'm going to peel them raw next time, I consider my veggie soups to be the best in the world 🤣🤣 so I tell people anyway.
😄 I hardly boil mines in the skin. if I’m making just ground provisions sometimes I add a little oil to the pot. But either way I usually don’t have an issue boiling it without the skin.
That’s true as far as the nutrients in the skin. For some reason I just always peel my bananas. Unless I’m just cooking only banana then I might leave the skin on.
Does boiling green bananas in the skin change the taste of the soup?
@@judithgould4363 probably not that you would notice but the skin can carry a lot of grit and ground in dirt, if I was going to boil them in the skin, I'd still wash them in the skins first boil them in a separate pots and then strain that juice of into my main soup pot. If they are un scuffed some folks slice them thin and leave an outer rim of skin.
