Claudio Gargioli, celebrated host of Armando al Pantheon in Rome, illustrates the classic recipe accompanying his version with many tricks to get the perfect cacio e pepe. Cristina Bowerman, a Michelin star chef, proposes instead a gourmet twist on the original recipe, that will make you think and probably discuss!

I saw the "melt pecorino with pasta water" technique in some other Italian video, and I picked it up as a technique due to issues with the cheese turning into lumps when making cacio e pepe or pasta alla gricia. Seeing that technique used on this channel, where they always show the proper ways to make things, made me feel very happy. Until now, I had felt like I was cheating, since I wasn't able to get the result i wanted just by adding the grated cheese and some water at the end.
When I make cacio e pepe my own wat the cheese always turns into lumps and I hate it. Now I finally know how to properly do it

@@parafraceren If it turns into lumps then the water is probably too hot.
You were getting lumps adding directly to the pasta because the temperature of the pasta/water was too high and the pecorino was breaking down or it wasn't not hot enough and it didn't melt properly. That is exactly the reason this dish is difficult to master and so many restaurants (even in Italy) screw it up even though it's so simple. Melting the pecorino in a pan with pasta water isn't foolproof but is much easier to manage and isn't cheating as you can see even top chefs do this. Buon appetito.
Another possibility might be not enough starch from the pasta in the water. Water and oil don't mix, and you need the starch inside the pasta water to hold it together. You want to minimize water, maximize starch, with some moderate level of oil. I got good results even if my cheese was lumpy at first - I just kept mixing it gently until the mixture loosened.

L'augurio dello chef Gargioli circa il fare bene tale ricetta è mestamente rivolto a tutti coloro che per renderla cremosa usano la panna.
Sono perfettamente d'accordo, l'uso della panna in questo piatto, come del resto in altri piatti "semplici", dovrebbe essere penalizzato come un omicidio

Chef: We're using less water for this one.
For the ones that require "more water" they actually wait until the hottest day of summer and cook the pasta straight into the beach.
Then they will mention it's practical because it already has a lot of salt.
I personally liked the tradition one way better.. much more simpler and seems way more creamy. Loved the idea of melting the cheese in the pasta water, very elegant.
2nd is really great for anyone with weaker stomach, peppery without actual kernels in it and just enough cheese to give it the taste but not a bit more to make more heavy

Here's a tip regarding lumps. I just made a batch, and still got some lumps even when trying to melt the cheese the right way. Contrary to no heat, I actually cranked up the heat, just for a brief moment. That way I was able to break up the lumps and evenly mix it more. And the result turned out great. It's not the "true" way, but at least now you know this "save" exists. Also, I used parmesan and bowtie, which might have a different effect than pecorino and spaghetti. And it really helps to have a decent amount of that pasta water, both to lubricate the noodles and make the sauce. Finally, be careful with the pepper. Doesn't take much before it tastes like overkill.
Give the cheese a rough grate to where it’s like sand pretty much, and then run it through a siv. The smaller the grate the better. That will help the cheese turn into a sauce better without having to deal with clumps of cheese
Claudio’s is best, I make that and add lemon like in the 2nd recipe.

I disagree. I liked the flavors Cristina's produced better. Is his more classic? Of course, but that doesn't make it better.
At least Chef Christina did not sacrilegiously grill the pasta and actually tried to elevate the flavours of the dish. But I don't have that much commitment to innovating so I'll do the classic version.

Io essendo catanese mi sono permesso di prepararla parecchie volte, non so se faccio degli errori durante la preparazione, nel senso che, il pepe io lo tosto come fa lei al momento che inizia a traslucidare lo tiro fuori lo raffreddore un attimo e lo schiaccio a coltello non troppo grossolanamente, metto su le mezze maniche trafilate a bronzo dentro abbondante acqua salata, in una padella in alluminio come la sua metto il pecorino romano "circa due etti e mezzo" per quattro persone aggiungo un po' di acqua di cottura e il pepe schiacciato non tutto però , sciogliendo il pecorino e non appena la pasta è cotta al dente la passo in padella saltandola, completo il piatto aggiungendo un'altra spolverata di pepe. Sbaglio a schiacciarw il pepe a coltello?

No need to eat that American macaroni and cheese. This is the original, full of life, science and simplistic beauty using just five ingredients. Pasta, water, salt, black pepper and pecorino. Healthy-ish, quick and one of my new all time favourites. grazie mille

Tradizionalmente no, ma anche secondo me viene meglio: risottando la pasta gli ultimi minuti in padella si mantiene molto più amido quando ci si aggiunge il pecorino.

finding this , (reading diffrent food cultures at 05:30 ) but now i find this recipe thanks ill try some but cheese is probably gonna be bränvin västerbotten cheese or präst (swede-without jobb) glad i found this video. might not be a pure Cacio e pepe but food is about trying diffrent things cultures and respecting the original ( my opinion).
I think both of those cheeses are made from cow milk. If you can find a hard cheese made with sheep milk you might get a flavour closer to the original. Anyway, enjoy the cooking and especially the eating part!

If you stick to tradition but suggest a little bit of personality, it's done, you have every food critic in Italy criticizing your dish.
I mean, it's the life, right? Italy fights hard to keep their traditions, especially in food. Good for them.
The rest of the world change their traditions to fit their environment. Good for them, too.
Mean while I ditch the chopsticks for the tongs. To each their own, use the tool you are comfortable with. I doubt they are superior in everyway, just for certain task.
@primaacca what new ingredient was being added by Alex's method though? He was simply increasing the starch content extracted from the pasta. I saw that comment, it was not applicable to Alex's method.
@primaacca It's not 10 times more effort though, particularly if you overcook, blend, strain, and then freeze the concentrated starch solution into cubes for every time you make pasta. It isn't significantly more effort, and whether it's worth the difference in result depends entirely on how much you value the experience.
It's not really a meaningful complaint unless you're talking about implementing it in a restaurant context and even then, it isn't difficult to implement. It's complaining for the sake of complaining, which is the favourite pastime of old men everywhere in the world.

I've made caccio e pepe several times now. I toast my pepe, then grind it with my mortar and pestle, then place into my skillet and add in some pasta water, simmer for a bit, separately I make a pecorino paste using pasta water, finally combine and stir with the pasta.
I'd like to try recipe #2 but I have a question; I see the pepe getting toasted, then fond added to the pepe and looks like boiling with the pepe, then there was a step of ladling out a cup of "what exactly" and straining it? Was it more fond?
It seems as if she is making a "pepper-fond" with the original fond and then adds it to the sauce instead of/along with pasta water to emulsify it?

Purtroppo questi cuochi snob tendono a voler personalizzare anche i piatti classici della nostra cucina a cui non dovrebbe essere cambiato nulla....sembra sicuramente piu scenica la preparazio e della donna, ma la cacio e pepe dell uomo la avrei mangiata dallo schermo
A me é sembrato che nella versione originale il cuoco abbia messo tanto , ma tanto pepe. Non oso immaginare chi mangerà quel cacio e pepe , fiamme come un drago.
