- I know what you're thinking... now THAT'S a bold statement to make but I promise you, this Cacio E Pepe recipe will not disappoint!
Do you know what the main difference is between Cacio E Pepe and a Carbonara? 😉
This is a work in progress where I'll be posting videos on the stuff I do in the kitchen and around the house - if it's linked to food, I'm trying to capture it on video and pop it up here for you to see.
Of course, cooking will be a major part, there will also be drinks stuff like wines I match with food to coffee training on different machines, tips and hacks in the kitchen, through to education like butchering and knife skills.

🧑🍳 INGREDIENTS:
• 250g spaghetti
• 8g whole black pepper
• 320g pecorino romano, finely grated
• 300g pasta water
🧑🍳 METHOD:
Blend whole black pepper. Ensure black pepper is fine by running it through a medium and fine mesh sieve placing any large pepper caught in the medium sieve back into the blender for a few extra seconds, repeat until done finally discarding all the super fine pepper which passed through the fine sieve. You should have perfectly even sized pepper inside the fine sieve, this is the heart of the peppercorns, the most fragrant and best part!
Place your spaghetti and a pinch of salt in the boiling water for 6-7 minutes
For the sauce, place about 2 cups of pasta water and the pecorino romano into the blender at high speed for a few minutes to create a silky smooth texture.
Drain spaghetti using a colander ensuring to keep pasta water in a bowl. Toast the peppercorns lightly in a dry pan and add a cup of the pasta water to a raging boil. Turn the temperature down to the lowest possible heat before adding the cooked pasta mix to the water and black pepper, once combined take the pasta off the heat and add the cheese sauce and mix well.
Allow the pasta to rest with a clean tea towel placed over top for 2-3 minutes. This allows the pasta to absorb the sauce a little. Remove the tea towel and use some extra pasta water to adjust the consistency if required.

Rest in Peace. You're the MasterChef in my mind and the greatest English teacher (I learnt a lot of expression from the TV program) in my days in Australia.
I am so devastated to hear of Jock's passing. I was in shock for a long time because I just couldn't believe what I was hearing. It came so suddenly, and I feel so sad, especially for his family and friends. I loved MasterChef and Jock was my favourite judge, I loved his techniques and humour, and his rapport with Andy. This is a hard one. Rest in peace, Jock. We will miss you ❤

From the first moment of the news until now and who knows how much more, I think forever, I'm in fan grief on this human being. After a week, I can put a few words together.
This man was too good for the current world. We didn't deserve him as much as he didn't deserve such a small amount of time on this planet with his beloved ones. When somebody important for us is passing away, it feels like we lost a part of our soul...in case with him, it got darker in whole soul dom without the light which he was giving to us.
I am a fan of him just from Masterchef and his cooking and teaching on his channel, and that was more than enough to him to play every human being note in my viewer soul. It was an honor to be your contemporary!...
I wish to the family come through this with a feeling of wide support from everyone and eventually find harmony and peace. You were making him happy, and all of that was so important, especially for him. I so hope he will find that as well.

Whatever the root cause its up to the family to decide whether to share it or not. Lets respect that and give our condolences. He has been very generous and always supported struggling chefs in master chef. Lets be good humans and pay our tribute.

Same. I was so excited for the start of this season, but my heart is no longer in it and I wouldn’t be able to watch this new season even if it were released.
I primarily use the MSR Reactor stove, 1,7 and 1 liter pots. I love the Reactor stove, as it’s the most efficient stoves I’ve ever used. I also have the XGK for winter use, when I need to heat up the tent. The XGK doesn’t produce much carbon monoxide, when just using it as a heat source. When I can get away with it, I will the MSR Reactor, and nothing else. ATB from Norway 🇳🇴
