- Arrabbiata is another hugely popular Lazio pasta recipe. To reconstruct its history and evolutions we have met two historic chefs of Castel Sant'Angelo, Alberto Tomasetti and Francesco Gregori, the same professionals who have been carrying out for years the spicy Penne all'Arrabbiata Festival di Ponte Alto. After the rustic and original version of the Lazio hinterland, we have moved to the heart of Rome, a stone's throw from the Pantheon, in the Idylio restaurant by chef Francesco Apreda. The "sunny" version of the Michelin chef, without distorting the ingredients, will make us look (and taste) this Italian classic with new eyes.

It's not just USA, all over the Americas, Italian immigrants in South America too have moved away from the principles of Italian cooking. In part I think it is poor people suddenly finding themselves in the land of plenty. There is a simplicity & balance to Italian cooking. You don't overload it. I prefer the classic to the gourmet in these recipes.
Im from bavaria, just a few hours with a car to Italy, and even here most people have little understanding and respect for proper italian cooking. Its probably better here than most places in the US, but still not great. This channel helps so much
Yeah this channel is awesome. CZcams has a lot of cooking channels but 99% of it is garbage, while this one has real great chefs as guests and it is well produced.

@@LongboardtTrail America has a long history of Italian immigrants. I think our case is that Italians coming to the states mixed cuisines with other European nationalities and the American focus on beef and dairy. There are some amazing Italian restaurants in my city (Portland, Oregon) that my totally unqualified self would call authentic, but there're many more that put cream in carbonara and throw garlic into anything and then call it Italian. What do Italian dishes look like in restaurants in bavaria?

@@spiro3431 Ciao. Vivo a Siviglia da qualche anno e quindi conosco bene la tortilla de patatas. Sono del sud Italia e da noi si usa molto la frittata di patate che ognuno fa come piu' gli piace. C' e' chi mettela cipolla e chi no; chi nell'uovo mette il parmigiano o il pecorino o solamente il sale.
La differenza con la tortilla española e' nella cottura e nel taglio delle patate.
Noi le tagliamo a cubetti e li friggiamo ( con o senza cipolla); voi le tagliate piu' o meno rotonda e le stufate.
La tortilla española quindi risulta mórbida;
Quella italiana risulta quasi croccante.
Di sicuro, se ben fatte, sono entrambe buonissime!!

In Italia l'immenso bagaglio della tradizione culinaria è croce e delizia per uno chef. Da un lato, rispetto ad alcune culture, si parte da una base eccellente che non necessita di particolari ritocchi. Dall'altro è difficile far emergere la propria vena creativa e molte volte si rischia di naufragare in virtuosismi non richiesti. Non è questo il caso dello chef Apreda, che con rispetto e semplicità ci fa guardare la tradizione con i suoi occhi. Bravo!

Our own cooking is always evolving, but it is necessary a solid base of appreciation, respect and deep understanding of our traditions in order to renew it with new techniques and concepts. i love the stark contrast between the two recipes, one makes it sure to leave chunks of the pomoderi pelati while the other makes a puree. one follows tradition the other follows inspiration.in both cases, all the people involved are a master of their art and i cant thank this channel enough for bringing this content to us.

The yellow tomatoes is an interesting choice. There are some recipes from Abruzzo & Puglia that use green vegetables in chilli oil. Somehow your palate is surprised something cool looking is so spicy. It's a strange & interesting sense sensation. I expect it would be the same here & totally different experience to using red tomatoes.

E' bellissimo notare come le vostre non siano semplici video-ricette.
Ogni video è un piccolo documentario, e al contempo un film, con un tono preciso, che racconta una storia e comunica delle emozioni. Questo trasmette proprio speranza. Da un lato i combattenti della tradizione, e dall'altro la sua versione solare. La sopportazione del piccante è quasi poetica, soprattutto in questo periodo!
E pensare che l'arrabbiata non è la mia pasta preferita, eppure...
Riuscire a trasmettere passione e tradizione con la cucina non è facile, soprattutto da un video di cucina.....complimenti, quindi, per esserci riusciti.

Just a tiny correction, in México tacos are not crunchy, nor sprinkled with cheese and pepper slices. Tacos are normally soft, if there is cheese it's melted below the meat and chili is mostly added as a salsa (which can be raw or cooked), but normally not in raw slices. This chef's inspiration does not come from the Mexican taco, rather from the southwestern "Tex-Mex" taco from American cuisine.

Mi sento, se fossi ritornata a Panarea di quasi 50 anni fa, senza elettricita, acqua corrente o gas, pero ogni sera mangiavamo una bellisima pasta, come e.a. penne arrabbiata! Era un bel tempo e come sono contenta che anche questi due chef lasciano cuocere il sugo per tanto, tanto tempo. Bello da vedere questi uomoni e alla fine: buon appetito! Buomissimo!
E dopo abbiamo Francesco Apreda con la sua ricetta di penne arrabiate. Molto buono, provero questa ricetta prestissimo, anche se non posso trovare pomodori gialli. Ragazzi, che Bonta! 😋
