The 50/50 Margarita was created in New York by Natasha Bermudez. Natasha split the base of the margarita between mezcal and manzanilla sherry resulting in a lower ABV version of the classic.
The mezcal margarita has smoke and vegetal notes whilst the manzanilla sherry adds a touch of salinity and minerality. It also dries and lengthens the margarita on the palate.
INGREDIENTS
- 1 oz (30 ml) mezcal, espadin
- 1 oz (30 ml) manzanilla sherry
- 0.5 oz (15 ml) Cointreau
- 0.75 oz (22.5 ml) lime juice
- 0.25 oz (7.5 ml) agave syrup
- worm salt (or smoked chile salt)
Smoked Chile Salt
- 1 part Tajinchile lime seasoning (amzn.to/43Lf9L8)
- 1 part paprika
- 1 part salt - Jak na to + styl

Ah ha! There’s the full strength shake again! The kid is back! 🎉
Looking better every week and we love to see it!
Haha, I did notice the harder shake in this vid when I was watching it back 💪
I love the Killer SMILE! Always waiting for it.
Hope the recovery is going well my dude!!❤
Feeing good these days thanks! 😁🙏
Loving your book! Clear and easy to read, the QR codes to your videos are an excellent addition.
I’m trying out new drinks I never thought I’d be keen on and are surprised every time.
Thanks Lachie! Good to hear you’re enjoying the book 🥳🙌
Damn, I need to find a sherry that size. Convenient.
Looking good, StB- hopefully the recovery continues well. Another excellent video!
Cheers Rob! I’m not quite 100% yet but I’m feeling positive 👍
First!!!
Been watching your content for three years and you have really helped me on my bartending adventure with your recipes I am forever thankfull!
You’re most welcome Leo! Thanks for watching my vids all these years :)
Build up to the smile….pure gold ! Glad to see you back buddy
Haha thanks mate! 🙏
Every time I see a cocktail like this, I kick myself for not having a knowledge base for sherry and how to use it. Guess I know where to start now! 😁 cheers and thanks for another great video.
That smile, that damn smile. I'm working on my upper body to be able to shake my cocktails like that. Also, Welcome Back!
Welcome back from San Diego CA.
Cheers!
Perfect for a Thursday evening with the Mezcal I have ❤
Sounds great! What mezcal do you have?
Our choices are fairly limited here in Central Victoria , using Perro D San Juan
How to make cucumber cooler,
Love your videos, Steve! I need to try this cocktail. Mezcal is one of my favorite spirits to use in cocktails. I have a bottle of the Vago Espadin mezcal which I enjoy very much. Have you tried it?
I stumbled across another (spicy) mezcal cocktail called “Oaxacan on Broken Glass” on Imbibe. Would be interested to hear what you think about it. Maybe you could do a video.
Any other cocktails with manzanilla sherry you can recommend?
Welcome back.
STEVE!!! As your most tenured student, I still appreciate your descriptions of the various ingredients you use in a cocktail!! This is def a must make!!! CHEERS to you!!
Cheers to you Tim! 🍻
This is an interesting version of a Margarita. The notes are pretty interesting flavours.
I tried it again with Vida mezcal afterwards.. I preferred it 😬
I see you have a bottle of Gunpowder and would be curious what cocktails it's good in. I've tried it with some flavoured tonics and found they didn't mix well with the gunpowder tea.
I’m sure it would work well in an alternate version of an Earl Grey MarTEAni… 🤔
@@StevetheBartender_ Great idea. Thanks!
Rancho Gordo in California has worm salt on their site.
Thanks for sharing Megan 🙏
Bro this looks amazing and tasty! Gotta make some of that worm salt! Sounds so good!
I don’t have anymore Tajin, but I bought Rylan some Takis (Fuego flavour) omg YUM! This seasoning as a rim would be amazing!
Very zingy and spicy hot… But SO good!
I don't have worm salt but I do have grasshopper salt! Will be trying this soon!!!
How does that taste??
@@StevetheBartender_ earthy, meaty, savoury, salty, smoky.
Sounds similar although the worm salt was spicy too.
Oh this beauty looks spectacular Steve!! Delicious!! I'd love to try this Mezcal. I love smoky drinks. My spirit of choice is always a delicious single malt scotch, (I am a major peat head!!) so Mezcal is often a nice switch up to try!! I hope you are feeling great! Awesome video! Cheers! 🙂
Feeling good thanks Christine! On the mend :-)
@@StevetheBartender_ Yay!!! Fabulous news Steve! I have a big smile! Keep recovering Steve! Before you know it you will be fully recovered! You have a wonderful life attitude! That helps a lot! Tons of people here care! 🙂
@@christinecamley thanks for the love Christine, it means a lot! 🥰
@@StevetheBartender_ 🙂You are so welcome my friend!!
You look like you were trying not to smile during the shake but just couldn't help it. So worm salt..... fresh worms or dried? 😊
It’s made from some sort of agave larvae.. I assume they cook and dry them but not certain 🤔
This one is new to me Steve, so thanks! Also, are you using smaller cubes? What size are those cause I might need some new molds.
I have a small Hoshizaki ice machine. The cubes are 25x25x23mm. Years ago I had a bigger machine that produced 28x28x32mm cubes…so no recent changes in my ice.
@@StevetheBartender_ Ahh, a bit out of my price range lol. I use 1x1x1 (inch) silicone molds at home and for my chan. TBH they are slightly too big. Yours looked perfect in the marg glass. I may now look for some smaller options. Cheers and thanks!
Yeah they’re not cheap! I had the bigger ice machine because I would cater for events many years ago.. so when I stopped events I simply downgraded. Otherwise I wouldn’t go buying an ice machine for home use 😂
I wonder how this would play if instead of a sherry one would use some port to play with a more smoky mezcal.
The Sherry is dry whilst port is typically sweet so it would be very different… Perth trying tho!
Bruh, you are looking slimmer. How are you feeling after your episode. Glad you're better.
Feeling good thanks! I’ve dropped 20kg so far (44 lbs)..
Try Halo del Santo for rimming. Similar to Tajin, but It has some rice powder that keeps it from clumping. Regards from Indiana!
Does it have the lime component too? I found that Tajin is quite tangy!
Hi, according to your recent "heart" update (and we all hope that's your doing better everyday), and despite the fact that we all enjoy your "alcool based cocktails", do you think that, in a near future, you'll make videos with "non-alcool-cocktails"? sadly on my side I had to stop drinking alcool, but I miss the "making cocktails fun part", and water is sooo boring ... thanks for what's your doing ;)
Strongly recommend Julia Barscope’s “Good Drinks: Alcohol-Free Recipes for When You’re Not Drinking for Whatever Reason.” Outstanding NA drinks that range in complexity and work required, from as simple as just mixing existing ingredients to very complicated syrups and infusions. The verjus spritz in there is in regular rotation at my house.
Absolutely! I’m already working on a vid just for you 🙌
I’ll have to check out her book, thanks for the rec Gizmo!
Which worm salt did you use? Looking it up online there appears to be lots of flavours. Also I don't know why i'm surprised that it actually has worms in it haha
This is the one here: www.agavelux.com.au/shop/worm-up-worm-chilli-salt/ it’s made from agave larvae! 🐛
My wife’s expecting…Any mocktail recs?
Congrats! My wife is too.. 7 weeks to go! How about your wife? I’m uploading some mocktails soon!
How far off would I be with fino sherry instead of manzanilla?
I should have run through this with more detail in the video. Manzanilla Sherry and Fino are very similar. Manzanilla is a Fino Sherry aged along the coast in a specific town. So the differences are very subtle.
@@StevetheBartender_ cool, thanks!
Great video!
Thanks Scotty!
That sounds like a very special mezcal!
Ooo definitely need to try this. Don't think I have ever used worm salt
Same here! I bought it on a whim and have been waiting to use it..
Just a warning, use that Vago Elote Mezcal at your own risk. I think it is awful, and I love mezcal
Thanks for the warning 🙏
Must say as a margarita purist that this drink need a different name. How hard would that be? This is the kind of mixology that tends to give original classic cocktails a bad reputation, no matter the intention.
If anything a 50/50 should be a Mezcal/Tequila margarita. Which can be incredible by the way
It does have a different name.. 50/50 Margarita. Or you want it completely different..??
It does have a different name. Don’t be an elitist
